    Default Super big batch of Chili

    Well, I made my double batch of chili-ended up almost being triple batch. I cooked some rice as well. I then put rice and chili into containers to freeze for work lunches or too-tired to cook nights. I ended up with 15 big servings!!

    This weekend I got a deal at the butchers with boneless skinless chicken breasts so I'm going to bulk cook chicken fajita mixture and freeze those into individual containers. Plus I already have beef rotini pasta frozen.

    Whew! I won't have to worry about work lunches for the rest of the month!!

    Chili is on the menu for us this week, as we are suppose to get some snow. WTG on making meals ahead of time, it saves time and money.

    oooooh......this thread makes me want chilli NOW...and it's only 9am in the UK! I must make a big batch and freeze portions
