    Default How do I make cream cheese creamier?

    I like the cream cheese in the little plastic containers that’s easy to spread on things. I don’t like the rectangles that need to be nuked before it can be spread on things, and more often the not I burn it.
    How can I make the rectangle stuff creamy like the plastic container stuff?

    Let it get to room temp, then just beat it. You may want to add a touch (about a tablespoon) of milk to it.

    When I'm using cream cheese in a recipe I put the blocks of cream cheese, still in their foil wrappers, on top of the stove (not a burner, just the stove). They're nice & soft to blend after a few minutes of that. I've also done the same thing with my toaster oven. I never microwave cream cheese any more because of how sensitive it seems to be.

    If you have a stand mixer it whips up great, just add milk til you get the consistancy you like. I don't even bring it to room temp.
    I do the same with margarine but don't add milk, just whip and add a couple drops of water. The machine whips air into it and it comes out great.

    I you buy the light cream cheese, it always seems easier to spread than the regular block cream cheese. Less fat, too!

    If you put it in a mixer you can also mix in different things: I like to make strawberry cream cheese, veggie cream cheese, honey and walnut.

    Like the song says - whip it, just whip it.

    Seriously, whipping it works great. You can add a couple of tablespoons of milk if you want to extend it a little also.

    putting in about 1/4 cup of italian seasoning makes a wonderful spread for melba toast or toasted baguettes. Then you can top that with a little grated cucumber or radish (I know, that sounds wierd, but people loved it when I took it to a potluck).
