    Default I've Taken the Plunge...

    It's after 2:00 am and I can't sleep so I decided to make my first homemade loaft of bread. I found a recipe that looked pretty standard and easy. Right now, I have the hard part done, the mixing and kneading. The dough looks really good and it's in a bowl covered with plastic wrap and rising to the occasion. Should know in 2-3 hours whether it worked. If it works, I'm going to make another couple of loaves. Not very frugal to split the batches like this, but I wanted to try one batch and see if I could do it.

    I'm keeping my fingers crossed it doesn't turn out like a brick.

    I am looking forward to hearing how the bread came out. I hope it is a success for you.

    I made wheat free, dairy free pizza dough yesterday. I have not made it in a long time. It will be interesting to see if it comes out good.

    Well...the bread is done. I've had my first slice with lots of margarine on it.
    I guess for the first homemade loaf it's ok... I wished it were a little lighter (seems to be quite dense eventhough I used all white flour) and I wished it didn't taste quite so bland (does that makes sense?).

    It's not that it won't get eaten, it's just that it didn't quite turn out the way I had hoped - delish!! Can anyone tell me what I might have done 'wrong'? Should I have let it rise the first time a bit longer. Can I add extra salt and/or sugar over and above what the recipe called for?

    You will get better the more you make bread. The first few times I made bread it was too dense. I let my Bosch mixer do the kneading and I have good results with that. If you have a Kitchenaid I think it would do the same thing.

    You can add an egg to make the dough "richer". Sometimes I use Butter instead of shortening or oil. You can add oatmeal for flavor and texture. Once you get the basics down--the sky is the limit.

    I am sure that as time goes on your bread will come out better.

    The pizza dough came out really good. I tasted my son's pizza and it tasted better than the store bought wheat free dough. A kitchen aid performs baking miracles in my opinion.
