Clam Chowder for 3 to feed 6
I was thinking how I could stretch out the can of Selects Clam Chowder. You know portion wise it isn't much. So I took 5 potatoes and cut in small chunks, skin and all. Three stalks of celery, cut small. Onion and carrotts all cut in small chunks. I boiled everything until real tender and drained.
In the pot I put the whole can of Select in, all the veggies I just cooked and then a can of evaporated milk and 1 cup of reg milk. Now I know I could have skipped the Selects and just made potatoe soup. But this was really yummy. It feed 4 adults and 2 kids and still left me 4 one cup portions for my lunch for the week.
Also I forgot I buy the real bacon bits in the bag from Sams, a little pricey but I use them on everything. I warmed them up in a pan and put them on top of the soup. And it was a real hit.
Just wanted to share.

From a Va. gal to a Ga. gal. Way to go. I'll definitely remember your recipe. We always have company stopping by on weekends and this would make a super supper in a pinch.

Sounds wonderful. Clam chowder is my favorite soup.
