    Default Using Left Over Oatmeal

    I had about a cup of left over quick cooking oatmeal last week. I make it with milk. I added 1 c. flour, 1 c. cornmeal, 1 tsp baking powder, 1/2 tsp salt. Mixed 1 egg, 1 c. milk, 1 tsp vanilla and 2 Tbs. applesauce (in place of butter or marg.) Then I mixed it all together. I needed to add more flour to get a better consistency. Topped with blueberries and turned into a 9 x 9 pan. Baked at 350 for 35 minutes.

    It was quite good. The mixture of corn meal, oats and flour was very good.

    How have you used left over hot cereals?

    I've used it in the Tightwad Gazette muffin recipe - turns out pretty well

    I love to make bread so I have put leftover cooked cereal in my bread. Really good results. I've used oatmeal, 10 grain cereal, cracked wheat cereal--it all works well and gives the bread texture and flavor.

    I also love to eat cold leftover oatmeal with milk and sugar. I know--kind of weird, but it is a favorite.
