    Default Corned beef

    Is anybody else stocking up on all the St Patrick's Day leftovers? They're on sale here for 99c a pound, and they freeze so well. In the summer I'll cook them in the crock pot, chill them, and use the sliced meat for sandwiches.

    Unfortunately everywhere I looked they were sold out at our local grocery stores. It's the only "red meat" I cook in our family, we love it (yes, with cabbage!!).

    There was still a good pile of it at the store yesterday, but they hadn't marked it down yet. When they do I will stock up. We like it with cabbage and also with potatoes instead of cabbage.

    When it's cold I like to make mine like stew, with cabbage and potatoes, plus carrots and sometimes turnips or parsnips. The carrots really add nice color. I've even put brussels sprouts in! With a big bowl full of vegetables sometimes people don't notice the meat portion might be a little small.
