    Default Turkey meal ideas?

    Hi all

    I don't eat much turkey but recently managed to score a large amount of pre-cut turkey breast strips (like what you would put in a stir fry), and was wondering if you have a frugal turkey recipe to share?

    turkey stew - fry up the strips with chopped onion and garlic, add whatever veg you have - chopped carrots etc and then stock - I use half a pint hot water and one stock cube for about 3 quarters of a pound - if I used 1lb I might make more stock. Thicken when cooked. You can add spices - I usually have some chicken spice - a general one- so add a shake of that. I sometimes add scrapings from a chutney jar or a dash of tomato sauce or brown sauce. A splash of wine if you have it and want it in too. Served with mashed potatoes and a green veg.

    turkey salad sandwiches

    We also use leftover holiday turkey to make turkey fettucini alfredo! Just use turkey instead of chicken.....

    Really, any recipe that calls for chicken would probably be okay with a turkey substituation!

    Default Turkey Stroganoff

    Sautee mushrooms, garlic, and chick. pieces quickly in a little olive oil. Add a can of cream of mushroom soup and simmer a few minutes. Take off the heat and stir in a spoonfull of sour cream, a pinch of cayenne pepper for heat, and a couple handfuls of thawed frozen peas. Stir and pour over egg noodles. You can rely on the soup for the mushrooms, but I find that adding some fresh mushrooms (when they are cheap and readily available) really kicks this up a notch. Garnish with fresh pasley from the garden if you have some.
