    Default What do I do with all these pintos?

    Any ideas of how to make frugal meals from pintos? We've made bean soup (yum!) and beans and rice...

    Surely there are other things I can do that will be cheap??

    Would appreciate any help! This is such an affordable staple food here...we'd really like to incorporate it into more meals.

    We (before we went on a diet) used to have red beans (I think you called it bean soup), fried potatoes and onions and cornbread for a yummy meal, often.

    ~48 yr. old sahw, livin' it up in our empty nest, smack dab in the middle of everywhere.~

    *We're debt freeeeeeeee! (including the house)*

    Refried beans-cook them up, I use the crockpot, mash them, season if you want. They freeze well, I use them in nachos or bean burritos.

    Tex Mex Casserole (beans, salsa or chopped tomatoes, tortillas and cheese in layers) Bean burritos, tostadas, vegetarian tacos (DD' s fave). We use them instead of garbanzo's on salads and in vegetable soup.

    I do this all the time and freeze them. It's so easy to make a meal out of this and if I'm feeding a lot of people, I just pull out more beans. I freeze them in 1 cup sizes, which is enough for a meal for me and DH. I don't add oil or anything so they are fat free, well, before we add cheese and sour cream. I don't have any other ideas for you, but I'm sure the other ladies will!

    You can take them and warm them in a pan with some garlic powder, or any other seasoning you like, sprinkle them on a salad and then italian dressing and crunched up doritos. I use the bakes doritos. Someone who was losing weight gave me that recipe and it was good. The warm beans and the cool salad.

    Apples and Spice Pinto Bean Cake
    2 cups cooked pinto beans, mashed
    1/2 cup honey
    1 egg
    1/2 tsp. salt
    1/2 cup chopped nuts
    1/2 tsp. each cinnamon, cloves, allspice
    2 cups applesauce
    1/2 cup oil
    1 cup whole wheat flour
    2 tsp. vanilla
    1 cup raisins

    cream honey, egg, oil and beans together. mix with dry ingredients. add applesauce, raisins, nuts and vanilla. bake as a cake or squares in jelly roll pan at 375 degrees for 45 minutes

    pinto bean bread

    2 pkgs. yeast
    1/2 cup lukewarm water
    1/2 cup evaporated milk
    1 tb. salt
    6-7 cups flour
    1 1/4 cups luke warm bean juice
    1 cup mashed pinto beans
    2 tb. shortening
    2 tb. sugar

    soften yeast in lukewarm water. heat bean juice, add milk, oil, salt, sugar, mashed beans and 2-3 cups flour. beat until smooth. add yeast and more flour until dough is easily handled. knead until smooth and satiny. place in greased bowl and let rise till double in bulk. punch down and let rise again. shape and place in 2 greased bread pans. let rise again. bake 40-45 minutes at 375 degrees.
