Frugal Meal
Today I was watching my grandchildren and cooking my lunch to incorporate it into what's already in the freezer. I like to cook lunch/supper in large batches and throw it in the freezer. When I leave for work in the a.m., I just have to grab a piece of frut and a container out of the freezer and I'm good to go. This is sooo easy and sooo fast and sooo cheap!!! I bought
a box of fish (Whiting) at Wal-mart for $8 (+). I got a 5 lb box which had 12 fillets in it (already cleaned, boned, etc. I also bought 2 bags of stir fry veggies on sale( $1.59/bag on sale). The fish is great because you can fry it, boil it, broil it, bake it, you name it and you can do it. I baked it @325 for 12 min/batch (4 in a batch). This is what I ended up with:
1. Brown rice on bottom of container.
2. Veggies layered on top of rice. (don't bother to even cook them).
3. I fillet of fish on top of that. (however you want to cook them)
Snap the lid closed. Throw it in the freezer. Forget about it until you need one.
Here's the breakdown.
1. 12 fillets of fish $9.00 ( forgot the exact amount, so I rounded up)
2. 2 bags stir fry veggies $3.18
3. Brown rice (already in cupboard.
Cost $9.00 + $3.18 = $12.18. $12.18/12 = $1.01/ meal.
You can't beat it. It's cheap. It's nutritious. It's fast. Fish is fat free. You get it all! Enjoy!!!!

...all you have to do is add your own spices. For batch #1 I used a spicy jerk mix; batch #2 I used lemon juice, butter (margarine), salt & pepper and for batch #3 I sliced some onion, celery, sprinkled a little salt, pepper and lime on it. I covered each batch with aluminum foil (the same dish and the same foil of course *s*). I've used the same fish for chowder, broiling, etc. It's very versatile.
