Fast Frugal Recipes
What are your fast frugal recipes?
Pork Chops In Mushroom Sauce
When I'm pressed for time, I usually place several pork chops in a casserole dish and top with a can of condensed cream of mushroom soup.Salt and pepper are not needed. I bake for one hour at 350 degrees or until done.
Baked Chicken
Another quick dish is to place 4 skinless chicken legs and thighs in a baking dish, and pour a small bottle of Italian dressing over. Bake at 350 degrees for 30 mins, turn and bake another 30 minutes.
Two Dessert Favorites:
Pineapple Angel Food Cake
1 box white angel food cake mix
1 regular sized can crushed pineapple
Mix the two together and pour into angel food cake pan. Bake according to box mix directions. Serve with whipped cream.

Pineapple Angel Food Cake
I forgot to add not to drain the crushed pineapple before adding to the cake mix in the aforementioned recipe.

Our favorite fast meal is:
Mock lobster (I generally get fish really cheap, so this is frugal for us)
tossed salad
pistachio salad

Love the pork chops in mushroom soup. I usually use breakfast chops..brown them first and season with Tony Chacheres. Then back for about 45 minutes and serve over rice..even my picky eaters like it and its super easy!

I do my porkchops on top of the stove with mushroom soup and I add some cubed or sliced red skin potatoes. Takes about 45 minutes depending on how thick/thin everything is. This is one of my all time favorites!

5 Layer Dip
We have this whenever we get avacados cheap.
Layer in this order:
1 can of refried beans ($1)
Guacamole(recipe below) ($.50)
1/2 cup of salsa (heat level based on family preference)($.25)
1/2 cup of fat free sour cream ($.50)
Sprinkling of Mrs. Dash
1/2 cup of shredded cheese ($.50)
Dip with tortilla chips, pita chips or our favorite, multigrain tortilla chips. ($1)
Cost for meal: $3.75
This serves all three if us, really hungry, with leftovers, and takes about 10 minutes start to table. All major food groups included, so while chips and dip doesn't sound like the world's healthiest, it's really not so bad.
Guacamole:
2 ripe avocados
1/4 cup very finely diced onion
1/4 cup sour cream
Dash of lemon or lime juice
salt and pepper to taste
Mash all ingredients together. That's it!
