mixed veggies? what to do?
okay i got a bag of mixed veggies, broccolli carrots and cauliflower
how would you cook it, what would you add?
im hoping to get my son into eating some too
bring on the recipes yall!!

Broccoli Pasta au Gratin
Hi there - I've made the following recipe before, but just with brocolli, but you could easily use the three you mentioned and it would work out. I love it - very tasty, and I bet your son will eat it!
Broccoli Pasta au Gratin:
1 Knorr cream of chicken soup
2 cups uncooked fusilli or other similar pasta
2 tbso. olive oil (or other oil you have on hand)
2 cloves garlic
2 cups broccoli (or other veggies)
1 sliced red pepper (optional)
2 1/2 cups water
1/2 tsp. dried oregano
2 cups shredded cheddar cheese
Preheat oven to 375 degrees, cook pasta until tender. Heat oil in skillet, saute garlic, broccoli and pepper 1-2 minutes. Set aside. Empty soup mix into large sauce pan. Add water and bring to a boil. Stir with a whisk. Add cooked pasta, vegetables and oregano. Turn into a baking dish, top with the shredded cheese. Bake 15-20 minutes. Enjoy!

MY MOM'S TATER TOT CASSEROLE
Take 9x13 pan, spray with Pam.
Layer 1 lb (or more) ground beef or ground turkey, browned in onions, garlic, seasoning, etc.
Spread thawed veggies over meat mixture (can use 1-2 bags veggies).
Frost with 1-2 cans cream of ?! soup
Top soup layer with shredded cheese
Arrange tater tots in rows over cheese
Cover and bake at 350F for 45-60 minutes or till bubbly. Remove foil after 30 minutes of baking time to allow tots/cheese to brown and get crispy.
Serve with homemade bread, rolls or biscuits and green salad if desired. Yummy.
May not want to try it when the weather is soooo hot, but is an excellent cold weather supper. Leftovers freeze well and are just as yummy.Kim

You can use that type of frozen veggie in stir fry. You can also add onions, blk olives and an oil and vinegar type dressing for a salad (don't cook the veggies, just defrost them. You can also add pasta to this for a pasta salad. Soup is always good. Just remember not all veggie dishes are healthy -- it all depends on what you add to them. I would try to stay away from the cheese, cream soups, sour cream, etc.
