Okay, school starts in 8 days here...
What are some good lunch ideas? DD doesn't like salad, but will eat carrots, and all cooked veggies. I have the sandwiches down, but need other ideas. I get bored giving her the same all the time, so I know she must be bored eating it. Although, I think that a fair amount of "trading" goes on with her and her friends!

I pack little containers of applesauce, baby carrots with little things of ranch, granola bars, here's one, take those little snack ziplocks, put yogurt in it, freeze it the night before and when she goes to eat it the next day at lunch, she can bite off the corner and eat it like that Gogurt stuff.

Pickles, carrots, cucumber, celery with cheese spread or peanut butter, yogurt, pudding, jello, rice krispie squares (I make mine on sunday & freeze them in saran for the week), muffins (I use the mini muffin pan and for some reason the kids love the novelty of it), fruit, granola bars, cheese & crackers - wrap the cheese to avoid soggy crackers, sorry...that is all I can think of right now! Here's a few recipes I was telling you about in above posting. I have not tried them.... just found them on the web this weekend.

CHOCOLATE ZUCCHINI SHEET CAKE
2 cups flour
1/3 cup cocoa
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1 1/2 cups sugar
3/4 cup vegetable oil
2 teaspoons vanilla extract Chocolate-Marshmallow Frosting
In a bowl, combine flour, cocoa, baking soda and salt. Combine zucchini, sugar and oil. Add to dry ingredients. Mix well. Stir in vanilla. Pour into a greased 13x9 baking pan. Bake at 350F for 35-40 min. or until a toothpick comes out clean. Cool on a wire rack for 30 minutes.
CHOCOLATE-MARSHMALLOW FROSTING
1/4 cup butter or margarine
1 cup sugar
1/4 cup lowfat 2% milk
1/2 cup semisweet chocolate chips
1/2 cup miniature marshmallows
1 teaspoon vanilla extract
In a saucepan, melt butter. Stir in sugar and milk. Bring to a boil over med. heat, stirring frequently. Boil and stir 1 minute. Remove from heat. Stir in chips and marshmallows until melted. Add vanilla. Spread over cake.
NOTES Very good, moist and tender. Can't taste or see the zucchini. Very reminiscent of texas sheet cake, but not quite as good. close enough, and it is healthier. The cake is much better after it has set for several hours or preferably overnight. It takes a while for the frosting to set up. The frosting is great.
ZUCCHINI BARS WITH CARAMEL FROSTING
3 cups flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon cloves
3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
2 eggs
2 cups peeled and grated zucchini
1/2 cup chopped walnuts
1/2 cup mini chocolate chips or raisins Caramel Frosting
Sift together flour, baking soda, baking powder, salt, nutmeg and cloves; set aside. Cream together butter, sugaars, vanilla and eggs. Combine both mixtures. Gradually add zucchini, walnuts and raisins. Pour into greased and floured 10x15 sheet pan. Bake at 375F for 20-25 minutes. Frost with caramel frosting.
CARAMEL FROSTING
1/2 cup butter
1 cup brown sugar
1/4 cup milk
1 to 1-1/2 cup powdered sugar
Melt butter. Add brown sugar. Bring to a boil for 2 minutes. Add milk. Bring to a second boil. Remove from heat. Add enough powdered sugar to spread.
CARAMEL BROWNIES
1 2/3 sticks butter
1 1/2 c. brown sugar
2 eggs
1 c. self-rising flour
1 c. pecans, chopped
1 tbsp. vanilla
Mix melted butter and sugar until creamy; add rest of ingredients. Bake at 350F until done. You may want to test with a toothpick.Kim

I have been pondering this a lot since I am taking classes full time and I am at the University during lunch. Here are some of the things I have tried or want to try.. Tortilla wraps w/ chicken or sandwich meat, fruit w/ fruit dip, veggies w/ dip, pasta salad (usually leftovers from the night before), yogurt, applesauce, chicken dippers, crackers w/ cheese and pepperoni or ham cubes. I also did cheese cubes with pieces of ham. Hope these help!

Make tortilla wraps! You can put just about anything in them! Or if you invest in some handy little thermos and/or insulated lunch boxes you could pack her some hot lunches. As a kid I loved having hot chili in the winter!
