Another great hit
I now bake an extra 5 potatoes when I do them in my small convection oven. I toss them in olive oil and a sprinkle of seasalt. (makes the skins nice) and bake them all. With the left over ones I leave in the fridge for all kinds of things. Today though I scooped them out and made the insides with celery carrots, onions and mayo and a dap of mustard. A great tasting potatoe salad. With the skins, I searched my leftovers, I had brocolli, so I cut it up small, onion (diced) some bacon bits I had from Sams ( you can buy a whole bag of real bacon bits, we use it more than slice bacon) and then stuffed the skins and sprinkled just a bit of cheddar cheese on them. (oh, yea, I sprinkled them with a bit of garlic and parsley salt. Baked them on the top rack for just 5 minutes. Wow, I had to really hold back to keep from eating them all. I am just happy to use up all my leftovers, makes saving money exciting around here. I guess I gotta a small life. Just wanted to share.

That sounds awesome! And you know some people pay a fortune at restaurants for your kind of "leftovers!"

Great job at using your leftovers!! I am going to have to remember this when I am baking potatoes.....just add a few more!

My kids love to take baked potatoes in their lunches. The potatoes are pretty big so they usually only take half.
In the morning we put butter and cheese in them and warm them up to melt everything. Then off to school they go. They can't heat them up there but love them anyway.

That sounds delightful. I love to cook potatoes. What an underrated fruit! I look forward to the approach of colder weather, when I can store larger quantities in the cellar. They're so versatile.
I'm still stuggling with potato soups, though. I can never seem to get these recipes right.

Yum, your potato skins sound wonderful! I think I'll make potatos for dinner tonight, its chilly here and a warm potato sounds so good. Thanks for sharing!
