    Default pita pizza - quick and cheap!

    I usually make my own pizza dough from scratch, but one night I wasn't feeling so ambitious. So - I decided to use up the pita bread going stale in my fridge.

    I put the pita on a flat baking pan, topped with left over spaghetti sauce, chopped onion, red pepper, left over lunch meat and a mix of mozzarella and cheddar cheese. I grilled it under the broiler for a few minutes and it turned out great! I just needed to watch the edges of the pita to keep them from burning. To fix that problem, I now bake the pita at 450 for a few minutes longer (not under the broiler). Both ways work good.

    When I went on vacation with my sister last week, I left my Dh instructions on how to make them at home, and took the ingredients to make some at the condo I was staying at. It turns out that pita pizzas are so easy to make they are "DH fool proof", and easy to make on my trip - I just pre-chopped the toppings (black olives, mushrooms, peppers, onions, cheese) and kept them in little re-usable zip lock containers.

    Back home, I discovered I could put all the pitas in a large freezer bag, and just take one out at a time to use, no defrosting needed!

    They're cheap, because I bought a large can of spaghetti sauce on sale (even cheaper than a smaller can of plain tomato sauce), and an 18 pack of pitas with a coupon. I find the pitas get cheaper in bulk - probably because no one imagines they can eat them all before they go bad - but they freeze great Also thin pepperoni slices are the cheapest thing at my deli - and I only use 3 slices in a triangle per pita. One pita pizza with a side salad, or two pitas pizzas on their own is a very big meal!

    Now I am on to even more creative en devours with pitas. Yesterday I boiled up a turkey carcass from my freezer, took off all the meat, using half for a turkey/bacon/corn chowder and the half to make a turkey salad. For the turkey salad meal, I brushed oil on both sides of a pita, and baked for a few minutes until golden and sprinkled it lightly with salt. I then covered the pita with baby spinach, and piled on the turkey salad. A bit messy to eat - but delicious.

    I would love to hear any more great pita ideas!
