    Default What to make with leftover pork fajita meat?

    I have a ton of leftover pork fajita meat. I need to find a way to use it up. DH wouldn't go for quesodillas. What else can I make?

    soup. Maybe add rice and some salsa, tomatoes, etc. Before serving, crumble a few tortilla chips over the top and sprinkle with cheese.

    What about freezing it and using it again later?

    It would probably make a good hash. Fry some up with potatoes, peppers, onions etc.

    How about a quiche? Scramble up some eggs and veggies and the meat and toss in - just wont have to add as much spice b/c the meat's already got it.

    Fried rice - same thing - scramble up some eggs, sautee with veggies and cut up the meat, add rice.

    Soup - as someone else mentioned.

    Serve as is - make some mashed taters, boil some corn and add meat.

    Pork Pot Pie? Pork Pockets? Wontons? Cold lunch wraps in a tortilla? Over greens in a salad? Asian noodle soup? Broth, veggies, meat and noodles.

    Yum!

    How about chopping it up and using it for meat in a taco salad?? Or pork fried rice?

    I agree with Jerry.... burritos. Makes lots and freeze extras. It will make a quickie reheat meal for another nite.
