Watermelon Rind Pickle
As requested, here is my grandmother's recipe for watermelon rind pickle. This came from a cookbook from the 1800's.
WATERMELON RIND PICKLE
Peel green and cut red from rind.
Soak 12 hrs. in 2tsps. lime to 2 gallons of cold water.
Rinse through 5 or 6 waters.
Drain and weigh, then cook in white vinegar and green food coloring, 1/2 pint of vinegar to each pound of fruit. When desired color is obtained, add 1 lb. sugar to each pound of fruit; 12 cloves, 12 allspices (whole), 4 sticks cinnamon.
Bring to boil, then boil slowly 1 hour. Put in jars.
6 lbs. of rind makes 5 qts. of pickle. You might like to soak some of the rind in red coloring to serve during Christmas. (I did some red, some green, then during Christmas, mixed them on a pickle tray. They were a big hit!)
