I Need Ideas For Vegetable Broth
What would go good with drained off broth from boiling vegetables? Tonight, I cooked green peppers,onions,garlic & tomatoes....what can I do with the leftover liquid?
Also any other suggestions for other types of vegetable broth.Thanks

Here's what I thought of:
*Freeze it and make soup with it - just add noodles and more veggies
*Add it to potatoes when you mash them
*Make poor man's gravy with it - serve over potatoes, rice, noodles
*Use it next time you cook chicken/roast/beans in crockpot
*Any doggie/kitty of mine would love it poured over their dry food as a treatKim

Use it in place of water to make a flavourful rice.
Poach some chicken in it.
Freeze it, and use it in any recipe that calls for chicken stock.
Add a bit of cream cheese (about 1/4 cup cheese to 1.5 cups broth), whisk in a pot until melted, season with salt and pepper, and you have a flavourful cream sauce. Serve with carrots and chicken and it is delicious.
Cool off and use to water plants (we always use our corn on the cob water for this!)
