    Question What would you make?

My friends and I are taking turns cooking Sunday lunch after church in order to save money. I don't know what to make. I have a budget of $20 for this meal and I'm cooking for 8 adults and 3 kids. I would like to have a main dish for my crockpot and sides I can make on Saturday prior.

Can you give me some ideas???

Chili over rice with a tossed salad and desert? Cheap and plenty to go around.

something mexican. rice & beans are cheap as are tortillas. Maybe a green salad & jello for a side along with the rice & beans.

I like veggie beef soup with cornbread.

Brown 1 lb ground beef with an onion, add 1 can tomato juice, 1 can tomatoes, 2 cups carrots, 2 cups celery, 4 cups (or more) other veggies (I change these up a fair bit), 2 tsp oregano, 1 tsp basil, 1/2 tsp garlic, 1/2 tsp salt, 1/2 tsp pepper. This is a very thick, filling soup.

How about brunch instead? That's what we often do on Sunday's after church. It can be prepared quickly. You can make scrambled eggs with ham and cheese in it, and pancakes, or toast or muffins (made ahead). Or instead of the ham, have bacon, or hashbrowns. Many different breakfast options and not expensive. We enjoy it because we rarely have time for a hot breakfast during the week, except oatmeal. I also have a wonderful recipe for this yummy cheesy potato casserole that can be made ahead, if you're interested just pm me.

I like brenda67's idea. The awesome roast beef is VERY good. You can find cheap cuts of meat to use. If you don't want to make it with mashed potatoes you could make rice with it. When I make this dish with vegggies I put them in the crock pot with the meat.

How about a baked potato bar? You put out the spuds and everyone puts on what s/he likes. Have lots of different topping set out: sour cream, butter, bacon bits, chili, hamburger gravy, tomatoes, etc. Cheap, easy and goooood!

How about Beef Stroganoff. You can make it with ground beef instead of steak, and noodles are cheap. Make a lovely green salad & a cake or fruited jello and you are all set.
