    Default Ideas for leftover chili?

    Hi all. I have some leftover chili in the fridge that I'd really like to use up. There's really not enough to freeze, but too much to throw out. I'm not really in the mood for yet another bowl of chili (we've been eating this for leftovers/snacks/lunches for a few days now). I was thinking about adding some frozen veggies, beef broth, cornstarch and letting it bubble a little, then putting it in a casserole and topping it with mashed potatoes to make a mock shepard's pie.....but I'm not sure how that'll work

    any other ideas?

    I like to put it in a casserole dish and top with cornbread batter. Bake according to the cornbread directions. I also like to top hotdogs with chili or baked potatoes with chili and cheese.

    I'd toss mine with pasta & cheese or add to tortilla's like tacos & top with taco fixings.

    mmmm, chili dogs and nachos both sound good - unfortunately out of both hot dogs AND tortilla chips!!!

    I think I might add some tomato soup and pour it over pasta with cheese...stay tuned...I may still change my mind!

    Ok...this is what I did:

    I took about 1 cup of my chili (just a basic - meat, beans, tomato chili ) and dumped it in a small pan. I added on can of tomato soup and a handful of brown rice. I let is simmer a bit and threw in a handful of frozen corn and about half a can of refried beans (also leftovers). I tossed in a 4 oz can of green chilis and a dash of our favorite hot sauce (salsa brava, I believe). I let it all simmer and thicken up - I was thinking mexican lasagna and when I opened the fridge to get the cheese, I saw some leftover spaghetti noodles. So, I mixed those with a beaten egg and tossed in some sour cream and cottage cheese (I would have used ricotta, but I didn't have any). I dumped the noodle mixture in a greased casserole and spooned the chili mix on top. I covered it and baked it for 40 minutes, then sprinkled cheddar on top and baked until melted and bubbly.

    It was ssssooo yummy!!! A little runny, so I may make it a little thicker next time - but its amazing what you can up with then you just start throwing stuff together!

    I was going to suggest
    *chili cheese fries
    *chili tater tot casserole: chili on the bottom, top with shredded cheese, top with tater tots and bake in oven at 350F for 35-40 minutes till bubbly.
    *chili bake: chili on bottom, top with shredded cheese, top with blobs of biscuit dough or dumplings made with biscuit mix.

    Chili freezes well, so go ahead and pop it in the freezer.

    We like chili on top of baked potatoes.

    Talking Chili Spaghetti

    Don't laugh, it's really, really good. Chili spaghetti. Just cook spaghetti noodles and top it with the warmed chili, grated cheese and serve with cornbread. We love it and so does everyone else that's tried it.

    I would never laugh at this - I was born and raised in the Cincinnat area, I grew up eating Skyline & Goldstar 3 ways!
