    Default Wanted: Your favourite Master Mix Recipes...Please

    I have juust begun using a Master Mix for all my baking needs. I woulod love to try your tried and true recipes using these mixes.

    I'm about to head out the door at the moment but when I get back I will post my favourite ones for you to try too.

    Default Orange Raisin Cake

    This is my favourite recipe thus far.

    Orange Raisin Cake

    3 cups mix
    1 1/2 cups sugar
    Juice of 1 orange and water to make up 1 cup
    2 eggs
    2/3 cup chopped raisins
    1 grated orange rind

    Stir sugar into the mix.
    Combine liquid and beaten eggs.
    Add half the liquid to the mix and beat two minutes. Scrape bowl occasionally.
    Add remaining liquid, raisins and orange rind.
    Beat two minutes.
    Bake in pans lines with waxed paper in a moderate oven about 25 mins.
    The raisins can be omitted from the cake and added to the frosting.
    Makes two 9" layers.

    I used sultanas instead of raisins and didn't chop them.
    I also used a ring pan and cooked the cake for 45 mins.

    Yum -- the Orange Raisin Cake sounds yummy.

    I haven't really experimented too much. I use it basically for pancakes/waffles, biscuits/dumplings and shortcake (for strawberry shortcake). My mom always used Jiffy mix to make her biscuits and dumplings. She used to make homemade bean soup and drop dumplings in them the last 20 minutes of cooking. You can even make them in the crockpot but you have to set the crockpot on high to cook them) You basically use the same recipe as biscuits.

    I've also made my own 'bake' dinner kits like they have in the store for $4. You can even pour 2-3 cans of beef stew (or any other leftover stew -- store-bought or homemade) in a pan, drop the dumpling batter in blobs in the pan over the stew and bake in oven till dumplings are done and stew bubbles. You can make twice as much for 1/2 the price!!

    I did try some chocolate chip cookies once and they were YUCKY.

    With getting ready to move and the holidays I haven't really done any more experimenting like I wanted to. After we get settled after the first of the year I plan on really getting into it more.

    I am eager to find out what others are doing.

    Thanks for that Foxxyroxxie. Enjoy your move. We woved last year at the start of November so I can understand how hectic it must be at your house leading up to Christmas
