    Default Turkey leftovers

    I still have turkey leftover from christmas. I want to use it up tonight anyone one have a recipe for a turkey casserole? I have never tried a casserole with my family but I am rady to give it a shot! or if you have anyother ideas I would be happy to hear them I am just tired of eating it with the norms like stuffing! LOL!

    That sounds good but DH does not eat soup or drink anything hot! I do not know how he lives life! LOL!

    My dad always cooked up rice, mixed with tomato sauce, chunks of turkey, seasoned it a bit, then he baked it. I loved it.

    What do you have in the pantry? Do you have any potatoes, noodles or rice? Any "cream of" soups or leftover gravy?

    Most casseroles are some sort of starch (potatoes, noodles, or rice), some sort of creamy substance ("cream of something" soup, leftover gravy, a batch of bechamel sauce, sometimes cheese is the creamy part), the protein source (meat or beans or cheese), and seasonings.

    Usually, there is a veggie in there too. My family won't eat it if there is a veggie in there.

    My favorite leftover turkey casserole is:

    Saute a handful of chopped onions in some butter until soft - throw in a 4 oz can of green chilis - add a block of cream cheese and stir until completely melted. Stir in about a cup of salsa and a few handfuls of leftover turkey.

    Spoon about 2T of mixture and a sprinkling of cheese into a tortilla and roll it up. Place it in a casserole and repeat until you run out of room or out of mixture! (I can usually get about 10 burritos). Pour 1/2 pint of heavy cream over the tortillas and sprinkle with about a cup of cheese (I use a mix of cheddar, jack & mozz - its my pizza mix).

    Bake at 350 for about 20-30 minutes. (If you make it in advance, you have to bake it longer and I usually cover it - however, if you make and bake it the mixture is already warmed, you are essentially just melting the cheese)

    We've been eating turkey wraps (sorry, not a casserole I know) with whole wheat tortillas and pepperonci, chipotle mustard, lettuce, onions.....mmmmmmm, good.

    My husband and son love turkey salad. We had a ton of turkey left over from our 13 lb turkey that he must have made 5 lbs worth of turkey salad. My ds ate it for breakfast and lunch day after day until it was gone. He loves turkey and chicken salad. DD and I do not eat turkey or chicken salad.

    Oh I forgot to mention Rachael Ray makes turkey croquettes with her leftover turkey. They are delicious.
