    Default Yaki Soba

    Oh so good!!! We had this for dinner tonight!

    3/4 c OJ
    3T soy sauce
    1 t crushed red pepper flakes
    1 t cornstarch
    2 t water
    2 boneless, skinless chicken breasts cut into 1" cubes
    veggies of choice (we usually use broccoli or asparagus)
    Yaki Soba Noodles (can sub cooked spaghetti noodles)

    Mix OJ, soy sauce & red pepper flakes and set aside. Heat some oil in two skillets over med heat. Saute veggies & chicken just until no longer pink in one skillet - add half of OJ mixture. Mix cornstarch & water and add to chicken mixture. Bring to a boil and simmer until slightly thickened. Add noodles remainder OJ mixture.

    Yes, I got the recipe from my MIL - I don't know how authentic it actually is, but its quite yummy!

    I can find Yaki Soba noodles in the Asian dept of our grocery store - we have a very large Asian community in our area. When we lived in KY, I had to go to a Japanese grocery store to find them. They are usually frozen, in a package of three (they are kinda like fresh ramen noodles).

    Sorry, original post says two skillets - that should just be one (sometimes I use two when using fresh noodles to fluff them up a bit....its not a required step!)
