    Default Freezing leftover vegs for soups

    I keep a freezer zip lock bag in my freezer and whenever I have only a small amount of leftover vegetables I just add them to the freezer bag for soup to be made later. Sometimes I will have only a tablespoon or 1/4 cup of just say string beans, which isn't enough for another meal. So I save all these small amounts and sometimes within a month I will have a good bit of various vegetables to add to my soup mixture.

    I do the same thing! Normally by the time I make my soup (which I'm making today!!) I have enough veggies in my container and don't have to add any more.

    I do this quite frequently!
    It's a great idea.

    Also, I've noticed at stores I can buy these already combined bags of frozen veggies. Things such as "mixed peppers, chopped" or "soup starter" (which is just onion, carrot & celery).

    Rather than paying for someone else to buy, chop, freeze - I do this myself.

    I catch seasonal veggies on sale, chop & quick-freeze.
    Depending on the veggie, though, you need to be careful. Sometimes freezing ruins the veggie. So research a little & find what ones need to be boiled/blanched first before flash-freezing.

    My parents always did this---leftover chunks of meat went in there as well....

    Me, too!! I had not done it in awhile and DD18 tonight said, let's start a freezer bag of veggies for soup. Looks like I've taught her at least one thing.

    I do one for veggies and one for meat. I used some of the freezer veggies and meat for stew Monday night.

    You add a bit of water and you can rinse out the last little bits of the spaghetti sauce in the jar and dump that into the soup bucket too.

    With it as cold as it is here and snowing I dug out my containers and put on a pot of soup. With hot homemade bread that I made today gonna have a rib sticking dinner.
