Creative topping ideas for baked potatoes, anyone?
I'm serving a "baked potato bar" to our home group from church this weekend--anyone have suggestions for something beyond the usual (and $$$) cheese, sour cream and bacon?

i do the barbeque one.
cook a pork butt in crock pot all day. then shred and add barbeque sauce. serve with onion, then the barbeque sauce and then some ranch.

I've used the flavored diced tomatoes. Not classy, but adds moisture and flavor without all the fat of the really good stuff that I'd rather have!

My favourites other than bacon etc are Tuna Mornay, Bolognaise sauce and Strogganoff. Lots of people here love coleslaw, pineapple, beetroot (might only be an Australian thing here). I did have a chicken alfredo (minus the pasta) at a Spud place once that was nice too. Oh Savoury mince works really well too, and you could do Taco mince aswell or even Sloppy Joe mix.
Just remembered that the deli at the shopping centre always has a lasagne one (which I love), I think they use leftover frozen ones (probably not too frugal). And they also have some mixed veg (broccoli, pumpin etc) in a white sauce too which always looks nice.

I know this sounds really weird, but cottage cheese on a baked potato is really good. Kind of cheesy, kind of sour creamy.

~I always make a cheese sauce to stretch the cheese. We like Pepper Jack cheese sauce with finely diced cooked ham on our potatoes. Any creamed meat or meat gravy would also be fab, like creamed tuna or turkey, sausage/bacon or ham gravy. Even chili or veggie soup and grated parmesan cheese would be super! One of my absolute favorites(if you can get a beef roast reasonably cheap) is to brown the roast in a pan and then cook it down in a crock pot with an onion and all that burned on stuff from the frypan. Then I dice it up and serve it au jus over a tater with scallions or chives and a slice of provelone(or a provelone or cheddar sauce!). It's sensational!~
