    Thumbs up Great, cheap dinner

    Last night I made Mexican Pork Chops.
    Here's how I made them:

    1C rice (free - but I'll say $.25)
    1C hot water
    1 can mixed veges (free - but $.50 at store)
    1 pint homecanned blackbeans ($.10 for lid)
    1 packet taco seasoning ($.33 - 3 pkt/$1)
    1 lb boneless pork chops ($1.99/lb)
    1 C shredded cheese ($1 - guess here)

    I mixed everything except pork chops in baking dish. Seared pork chops on top of stove then placed on rice mixture. Wrapped tightly in foil and baked @ 425 degrees for 1 hour. Then, I took it to DBF and put the cheese on top (I didn't have any) and baked for about 5 minutes @ 350 degrees to melt cheese. It made 4 very generous servings for $4.17 if you had to buy everything. Could easily feed 6 with a salad on the side.

    P.S. DBF took just a little on his plate at first, but then went back and filled the entire plate! This is a man who thinks Hamburger Helper is gourmet, and is shocked that you can actually make things like "Taco Seasoning" without a packet!

    HUmm... I took pork chops out for dinner but hadn't decided what I was going to do with them . That is untill now! TIA

    I was going to make chicken enchiladas tonight, but now I'm thinkg of using the leftovers of this to make the filling for the enchiladas. Just add more cheese and roll in tortillas. Hummm...
