    Default V8 Soup

    DH loves V8, but of course I will only buy it on sale with a coupon. Anyway, I thought it would be more healthy for him to drink the low-sodium version and bought a bottle. Turned out he HATED it. Well, I wasn't going to throw it out, so last night I made this soup and it was delicious!!!

    Browned a small onion and 2 cloves garlic in olive oil. Then added in the V8, a bag of mixed veggies, and a large handful of whole wheat elbow pasta. For seasonings I just used salt, pepper, tarragon and a bay leaf. I let it cook until the pasta was soft.

    It was really good and I highly recommend it if you ever have an unwanted or cheap bottle of vegetable juice!

    I did that before.. wasn't it good. I also split what I had left of it and poured into two clean water bottles and froze them. Then when I needed it I used it. I also used it in my chili..

    My mil throws a pork roast in the crockpot with a little V8 and it's wonderful.

    i do that all the time for veggie soups.
    except instead of V8, I use the campbell's brand (i dont like the celery taste in V8). it's generally low in sodium, and if i do want added salt, i use sea salt (it doesnt have the same effects on heart issues or blood pressure the way table salt does).

    Default Thanks!I just had the most yummy lunch!!

    I don;t know why I never thought of it before!!! After I read your post, I decided to give a try. I buy low sod V8 by the case at Sams (I know, not the most frugal, but I am looking for a balance btwn frugal AND healthy!!). Anyway I poured a can in a pot on the stove, threw in half a bag of stir-fry veggies w/rice, put in some garlic and onion powders, and then shook in a bunch of hot sauce......YUM-O!!!!!

    I use the spicy V8 for my chili. Yummy! Soup sounds like a good option too! Thanks!

    ~I've used it in meatloaf before.Tomato juice is tomato juice after all. Haven't had V8 in years though. If I get some cheap, I'll have to try the V8 and pork recipe. Sounds different!~

    I always use V-8 in my chili. It really gives the chili a better taste. will have to try in soup.
