    Default 5 Easy meal ideas with Rotisserie Chicken

    Rotisserie chicken can be a great easy meal idea when planning what
    is for dinner as well as an item that can be picked up at your local
    grocery store quickly. Besides having a roast chicken with a side
    dish here are a few ideas of what you can do with shredded chicken.

    Add to a salad. If you are short on time buy bagged lettuce and
    vegetables already cut up. For a cheaper alternative buy lettuce,
    vegetables of choice, sliced ham, sliced cheese and your rotisserie
    chicken. Assemble your salad at home and serve with garlic bread if
    desired. Another option is a Caesar salad topped with shredded
    chicken.

    Add shredded chicken to tortillas. Top with shredded cheese and salsa
    or sour cream. Roll up and either broil in the oven for a crunchy
    tortilla or place in the microwave until the cheese is melted.

    Create a quick quiche chicken pie. You can always make a chicken pot
    pie with vegetables with your chicken. But if you want something
    different add shredded chicken to 1 1/2 cups milk, 3 eggs, and 1 ½
    cups of shredded cheese. Season with salt and pepper. Blend together
    and pour into a pie crust. Bake for 40 minutes at 375 degrees or
    until lightly browned and knife inserted in middle comes out clean.
    To add a vegetable to the meal add 1/2 package frozen chopped
    broccoli thawed and drained to your egg mixture then pour into pie
    crust.

    Put together a soup. Using canned or homemade chicken broth add
    frozen vegetables, shredded chicken and pasta noodles or ravioli
    noodles for a standard chicken soup. Other soup ideas are adding
    chicken to a white bean chili, spice chicken soup up with tomatoes
    and corn, or add rice or dumplings instead of noodles.

    Chicken salad. For a quick meal idea stir shredded chicken with
    mayonnaise and pickle relish and serve on a croissant or hard roll.
    Or go for a different chicken salad mixed with almonds,cooked noodles
    and chopped eggs with or without mayonnaise. There are many
    variations of chicken salads you can find.

    No doubt Rotisserie chicken can help make dinner into an easy meal
    with just a little imagination. Chicken can be used in so many
    variations of meals it is no wonder it is so popular throughout the
    world.

    Our families favourite recipe using any leftover chicken is a Chicken and Veg Mornay.

    Make a mornay sauce (about a litre), add the chopped up chicken (rotisserie chicken adds great flavour). Add any vegies u like. I use a lot of frozen veg, and zap some diced carrots in the microwave. Add some cheese if u like. Adding pasta or serving over rice will bulk it out. You can make this ahead and place in a casserole dish to be reheated in the oven if u like.

    I make my tuna mornay the same way too.

    Default What do you do with leftover rotisserie chickens?

    I have half a rotisserie chicken leftover from last night. What do you do to stretch what's left?

    Please be specific, I'm a dummy. I don't even know how to use it to make soup. LOL.

    If there were ever any leftover chicken at my house I would have to call 911 because it could only mean that DH was dead or dying.

    I make chicken salad for sandwiches (Mayo & chopped celery, grapes if I have them) and then boil the carcass for soup with a few carrots, celery and onions. After all of the meat falls off the bones, strain out the bones and add a few egg noodles. Yummy!

    I LOVE rotisserie chicken. I buy 1 almost every week. Being single, I get quite a few meals ou
    t of it. You can make fried rice with the leftovers, or sometimes I make quesadillas with chicken and cheese. I'll chop it up and put it on salad for a light supper or lunch. Chicken salad is also a favorite. Enjoy!

    Chicken-Cheese-Rice

    Pick off excess chicken (small pieces)

    Cook minute rice as directed and add desired amount of shredded cheese.

    Stir in chicken.

    This is so simple and yummy. It doesn't require a lot of chicken either.

    You can shred it and put it on top of stuffing or mashed potatoes. For a more Thanksgiving-ish dinner, put some gravy on top. Or, shred the chicken and and put it inside a tortilla with some shredded cheese for quesidillas. You could also make a casserole by mixing 1 can cream of mushroom, 1 can of cream of chicken, stuffing, and some cooked rice. Cook at 350 till the stuffing is cooked. Hope this helps!!!

    Chicken tacos. I add corn, black beans, salsa, etc. to the leftover chicken and warm it up. Then, I put the mixture on flour tortillas with lettuce, tomato, sour cream, etc.

    These are great ideas! I might use the cheesy rice idea tomorrow for my lunch, adding what little bit of meat is left (my DS and I ate the rest of the white meat for today's lunch, but there's still some dark).

    I really need to try the soup idea!

    LOL at frugalwitch's comment. My DH loves the white meat and usually we have very little left, too!

    I bought one just a couple of days ago. I usually make 3 meals for a family of 4 out of one chicken which costs us here $4.99.

    I usually make a meal by making : club house sandwhiches
    Chicken Ceasar Salad
    Chicken soup
    Chicken Fried Rice
    Chicken Pot pie
    Chicken with veggies and dumplings.

    Or I will make say 4 Chicken sandwhiches (two for dh and one each for our dd's) for lunches, and pick two main meals listed above.

    It really is amazing how much chicken there is on one of those. I had never even bought one till a few months ago for the first time and I am soooooooo happy that I did!

    Last time I had chicken leftovers I made bbq chicken pizza.........it was yummy. I took the rest for lunch the next day too!! I just picked the chicken clean tossed it with bbq sauce and put it on pizza dough......smothered it in mozzarella.

    I buy whole chickens anytime I can find them on sale, last week at Krogers they were $.49/lb so I bought 6. A ~ $3.00 chicken can feed my family of six for two dinners plus leftovers. I roast it the first night, then the second night we have one of three dishes normally:

    Chicken Pie
    ~ 3cups cooked chicken (whatever you debone)
    1/4 cup flour
    1 1/4 cups chicken broth
    pie crust (both bottom & top)
    salt & pepper to taste
    Mix flour and broth together with salt and pepper. Pour mixture over chopped chicken; stir. Pour mixture into pie shell. Cover with top crust. Pinch edges to seal. Bake at 375 for 45-60 minutes.

    Chicken Tetrazinni
    12 oz cooked thin spaghetti
    1/2 cup chicken broth
    2 cans cream of mushroom or chicken
    16 oz sour cream
    1/4 cup butter
    1 cup shredded cheese
    2-3 cups cooked and shredded chicken

    Combine all ingredients. Save 1/2 cup cheese for top. Bake at 350 for 30 minutes. Freezes well

    Chicken Casserole
    10oz broccoli (steamed)
    ~2 cups cooked chicken
    1 can cream of chicken soup
    1 cup grated cheese
    1/4 cup milk
    1 tsp lemon juice
    1/2 cup mayo
    1 cup bread crumbs
    2 Tbsp melted butter

    Lightly grease 1 1/2 Qt baking dish. Arrange cooked broccoli on bottom. Spread chicken on top of broccoli. Combine soup, milk, lemon and mayo. Pour over chicken. Sprinkle with cheese. Melt butter; mix with bread crumbs. Sprinkle over the top. Bake at 350 for 45 minutes.

    I buy a rotesserie chicken every week from Costco... I use it all too....
    slice the breasts and use as lunchmeat...chop some up and add onion, green pepper ( use whatever you like) to make chicken salad... and a few times have boiled the bones to make chicken broth ( add veggies after you remove the bones from the water and then boil again)
