We like most fish sprinkled with cumin, chili powder, black pepper and salt then either grilled or baked. I serve it over rice that has been cooked or steamed, then tossed in a skillet with sauted peppers and onions and seasoned to taste. It's a family favorite here.
Flounder also pan frys nicely and makes a great fish sandwich.

~I absolutely love corn chip flounder! You dip the filets in a mixture of sour cream, paprika, chili powder and lemon juice then into crushed corn chips. Place onto a lightly greased, aluminum foil covered broiler pan. Drizzle with some melted butter or margerine and broil. If I remember correctly, it's about 15 minutes. It's sooo yummy!~
