    Default Pineapple Ham Casserole

    Pineapple Ham Casserole
    1 can (20oz) pineapple tidbits
    1/2 C mayonaisse (full fat, not reduced or no fat)
    1 t salt
    1 t prepared mustard
    1/4 t pepper
    3 C cooked rice
    2 C fully cooked, cubed ham
    1 C chopped green pepper
    1 1/2 C (6oz) shredded swiss cheese, divided
    1/3 C chopped onion
    Drain the pineapple, reserving 1/2 C juice; set pineapple aside. In a large bow, combine the
    mayo, salt, mustard, pepper, and reserved pineapple juice; mix well. Fold in rice, ham,
    green pepper, 1 C swiss cheese, onion, and pineapple.
    Transfer to a greast 2qt baking dish. Cover and bake at 350* for 30 minutes. Sprinkle with
    remaining cheese. Bake uncovered for 10mins or until heated through and the cheese is
    melted. 6 servings **I skip the green pepper & onion

    DH said it sounded yummy. I'm not fond of warm pineapple, but I bet the rest of my family would think this is delicious.

    We had it for dinner last night, thanks for a definate keeper Heather. It's one of those dishes that's makes it hard to walk away from the table, lol.
    I made it as written but baked without foil. and browned the top after the last cheese was put on. Gotta love crunchy cheesy top.

    Yah! Glad you liked it!

    Dh likes it when I make the cheese crunchy/bubbly too. It's one dish I can get the WHOLE family to eat with no complaints (and I have two rice haters!).

    I didn't end up making this for dinner last night so I made it for brunch today. It is YUMMY. Hubby loved and even my picky dd ate a small amount of it. It IS a definate keeper here and would also be a great thing to take to church potluck dinners/lunches. Thanks!!
