    Default Train Smash Mornay

    500g beef mince
    1-2 large carrots, grated
    1 medium zucchini, grated
    1 large onion, chopped
    2 Tablespoons curry powder
    1 large (820g) can condensed tomato soup (I use Heinz)
    1 cup uncooked short or medium grain rice
    Salt & Pepper to taste

    Fry the onions, carrots and zucchini until onion is soft.
    Add the mince and cook til browned off (breaking up as you go).
    Add the curry powder and cook of for a minute or two.
    Add the rice and the soup. Season to taste.
    Cook over a medium heat stirring fairly regularly so that the rice doesn't stick to the bottom.
    Cook until the rice is cooked through.
    You will have to add water (usually about the cans worth).

    This would be a great Potluck dinner if you have heating available. Serve it in a casserole dish with chicken crisps crushed on top.
    We serve it with buttered toast on the side, but feel free to sereve with vegies too.
    I use Hienz tomato soup as it gives the best flavour. If you use a generic brand add a little tomato paste to give it full flavour.
    You can add as much or as little curry powder as your family will like. I only add this amount so that the curry doesn't overpower the dish.
    the orginal recipe called for peas and/or beans instead of the zucchini but I prefer the zucchini.
    You could hide lots of other vegies in here too.

    I'm sure it;s DELISH, but no way am I the only one that thought the name was hysterical!!!

    And then there;s the obvious question:

    Yeah I know the name is weird. I have no idea where it came from. I gave the recipe to a friend and her hubby kept forgetting the name and ended up calling it Roadkill by mistake!

    Beef mince is the same as hamburger from what I understand and 500g is half a kilo or about a pound.
