Missionaries coming for Dinner Tomorrow (Help)
Ladies, I have some Missionaries (4) coming to dinner and need a easy, inexpensive menu. I am at my witts end trying to think of something that most everybody would like and not a wallet breaker.
I think I will serve Ice tea or water for drinks, I want to keep it simple but something filling with a bread, vegetable & dessert. I usually cook from scratch

I read your post and thought Sheperd's Pie.... I got a wonderful recipe off the Food Network last fall and its filling and soooo good! Would post it if anyone is interested.
I think I'm gonna make it for supper tonight now.... I'm hungry!

i am assuming they are LDS - might want to re-think the iced tea...
mine used to like tacos. it's a good opportunity to make a small turkey, you'll eat for a week.
sadly, I am not allwed to feed ours anymore. I used to feed them monthly, then I became a single woman , and due to some misbehavior somewhere, divorced women living alone are not allowed to have them over anymore.
11% gross to retirement
10% takehome to tithe and offerings
emergency fund maintained at 3000(works for me)
credit card debt 7500
mortgage free
freedom accounts/sinking funds that ebb and flow
then live on the rest!
i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

Taco Pie
1 Lb ground beef
1 C rice
1 C Shredded Cheddar
1 C corn
1 Pkt Taco Seasoning
**Cook the rice separately according to directions
** Brown Beef and drain. Mix in taco seasoning
In a large casserole pan layer items:
Beef, then corn, then rice, and top with shredded cheddar. Bake at 350 for approx 1/2 hr.
This comes out like a Sheppard's pie and can be cut into squares. It can be served alone or accompanied by a salad. We like to serve it with fresh baked bread.
I am sure there are many variations. We like these:
* Try Ground turkey or chicken for a lower fat alternative
* Try Shredded chicken, possibly from leftovers
* Mashed potatoes can be used instead of rice
* Montery Jack or Pepper Jack s=can be used instead of cheddar
* Top the casserole with Cornbread mix before baking

Why in the world would you *assume* they are LDS???? Pretty much every church I'm familiar with has missionaries!

I would go with the lasagna, a salad, and whatever you want to serve to drink.

Another idea is to make a soup. I would make tortilla soup in the crockpot.
Here is my recipe (in case some one wants it):
2 cans black beans, rinsed
2 cans diced tomatoes, Mexican or regular
1- 14 oz can tomato sauce
1 - 4 oz can chopped chili's (optional)
1 cup salsa
1 to 2 cups cooked chicken or 2 to 3 chicken breasts
Tortilla chips
Cheddar cheese, shredded
Combine beans, tomatoes, tomato sauce, chilis, salsa, and 2 cups water in a crockpot. Add chicken. Cook until chicken is done (if using uncooked chicken) or until heated though. Cut up chicken.
To serve, crush tortilla chips and place in bowl. Pour soup over chips. Top with cheese in desired.
I make this recipe for company all the time. I have never had any complains. To speed things up, I use cooked chicken or I precook the chicken on the George Foreman Grill. You could also use canned chicken or use Turkey. You could also leave our the meat. I cook it in the crockpot, but I am sure that it could be done on the stove.Julie

Thank you all for these wonderful ideas, I am keeping these yummy sounding recipes for future meals!!
were not LDS, Were Southern Baptist. Hubby & I both work at a Baptist Bible college and the missionaries come all summer to help out with needed things in our area, I know I will be doing this often as its our first summer here and the faculity & staff host them for dinner alot.
I have decided to do Baked spaghetti, (has anyone made this before? Is it good?) I thought I could make it in the morning & stick it in the oven before they get here..also garlic bread & salad & a pie for dessert.
