Need ideas for Easy, Tasty salad
Hi, everybody!
My dh and I have actually been invited to a social event tomorrow ( adults only) and I have offered to bring a salad and some wine. I need ideas! My only criteria is that it is easy to make and tasty. I think they might be grilling shrimp.

a quick pasta salad always hits the spot.
boil rotini noodle (corkscrew ones)
cool with cold water and drain
add italian salad dressing
add any raw veggies you like and/or pepperoni and/or mozz cheese
coleslaw
bag of slaw or better yet broccolislaw
bottle of coleslaw dressing

Any type of green salad with some thin sliced apples or orange segments would be nice. Just make a vinegrette for a dressing. Shaved parmesean cheese would go nicely with it. I think fruit and shrimp goes together nicely. To make sure it doesn't get soggy mix together when you get there.

I love a green salad with lots of interesting things in it. Like shoiji said, apples and oranges. I also like to put pineapple, raisins or dried cranberries, Grapes, olives, feta cheese, fresh peppers, cucumbers, etc. I like to have something interesting in every bite.

Here are my two favorite and tasty salads:
Salad #1:
-Mixed Field Greens
-Small cucumbers, thinly sliced
-Basil, sliced thinly
-Goat Cheese
-Pine Nuts
Toss all ingredients together with a tiny bit of olive oil and balsamic vinegar and a touch of salt and pepper. I would do the tossing when you get to the party.
Salad #2
-Spinach Greens
-Dried Cranberries
-Feta Cheese
-Seasoned Croutons
Toss ingredients together with your favorite vinaigrette. I use the good seasons packets, made with balsamic vinegar instead of regular vinegar.Last edited by itsahumanzoo; 07-25-2008 at 02:25 PM. Reason: forgot something :)

One of our summertime favorites is my Relish Salad....
Dice:
Cucumber
Tomato
Button Mushrooms
Vidalia or Red Onion
Chop a small handful of Cilantro. Mix all together in large bowl. Sprinkle in salt, pepper, garlic salt, olive oil, red wine vinegar to taste.
Let it sit at least an hour before serving...... MMmmmmmm

This wild rice salad is a hit everywhere I bring it...
1 cup wild rice
1 cup uncooked brown rice
2 cups frozen petite peas
4 green onions, sliced
2 stalks celery, sliced
½ cup craisins
½ cup olive oil
¼ cup wine vinegar
2 T soy sauce
1 T sesame oil
1 T sugar
Cook the rices seperately, according to the directions. I usually cook mine in the rice cooker with 3 cups of water for the wild rice and 2 cups for the brown rice.
Set it aside to cool. Add the peas, green onions, celery and cranberries. Toss gently to combine.
Whisk together the olive oil, vinegar, soy sauce, sesame oil and sugar. Pour over the rice mixture, and toss until everything is evenly combined. Chill and serve.Last edited by The Muse; 07-25-2008 at 03:32 PM.

Gazpacho Salad
mix
1/3 cup mayo
1/4 cup cilanto chopped
garlic clove minced
salt
pepper
1/2 tsp hot sauce
then add
3 cups diced plum tomatoes
diced cucumber
1/3 cup diced red onion
1/2 cup diced red pepper
Stir it all together with the mayo mixture and chill in fridge.
We love it!!

A favorite of ours is Greek Pasta Salad
1lb rotini or bow ties, cooked and cooled with cold water
2 tomatoes
english cucumber
black olives
red or green pepper (opt)
garbanzo beans (opt)
feta cheese
zesty italian dressing or greek dressing
salt/pepper/ital spice mix as desiredLaura

This is one of my favorite salads, especially nice for summer as it's made with garden goodies and likes to be served at room temp.
