    Default Dinner Ideas... Help

    Hi Ladies,
    I am fixing a roast chicken tomorrow and my mind is completely blank on what to serve with it. Any suggestions?

    hmm... roasted chicken, definitely mashed taters, the carrots are a good sweet dish, what about adding something bold, like green beans. Make 'em fancy & add almonds or peanuts.
    Are you going to have gravy w/the chicken? If so, keep the sides light.
    maybe a salad for something light.
    maybe some yeast rolls or fresh biscuits.

    and nothing says "dinner" like dessert! LOL a pie? brownies? cookies? a cup of coffee?

    Enjoy whatever you decide!

    Mmmm I love all kinds of roasted chicken.My favorite lately...lol is lemon, rosemary chicken with potatoes , carrots and onions roasting with it. I make a green salad for on the side.

    I just came across a new recipe for mashed sweet potatoes puffs. I can't wait to try it, because in my house they love 'em.

    Sweet Potato Puffs

    4-6 med. sweet potatoes
    3/4 cup sugar or to taste
    1/2 tsp. nutmeg
    1 tsp. lemon juice
    marshmallows
    crushed corn flakes

    Boil potatoes till tender. Drain & mash. Stir in sugar, nutmeg, and lemon juice. Cool. Shape mixture into balls around marshmallows. Roll balls in crushed corn flakes. Place on buttered pan and bake in 350 oven about 30 minutes.

    When I make the 'usual' sweet potato casserole, I use brown sugar & cinnamon on top of the marshmallows. I might replace the white sugar & nutmeg with those.

    PA Dutch potato filling, gravy, buttered corn and red beet eggs. Can you tell I live near the Amish Country?

    Recipe can be downsized. This is a can't mess up kind of dish.

    PENNSYLVANIA DUTCH POTATO BREAD
    FILLING

    5 lb. potatoes
    Milk
    1/2 lb. butter
    Salt
    Pepper
    6 eggs
    1 med. bunch celery
    1 1/2 lb. onions
    1 (15 oz.) pkg. all purpose seasoned bread stuffing

    Cook and mash potatoes using 1/4 pound butter and milk as needed. Salt and pepper to taste. Beat eggs for 3 minutes then fold into mashed potatoes. In large skillet melt other 1/4 pound butter. Chop onions and celery. Saute them at medium heat until soft and slightly brown. Fold into potatoes along with bread stuffing. Place in baking dish and bake at 350 degrees until golden brown, about 45 minutes to 1 hour. Serve with gravy. Serves about 20.


    MOM'S RED BEETS AND EGGS

    2 cans whole red beets
    Sugar
    Cider
    1 doz. hard boiled eggs

    Drain and save red beet juice from cans. Measure red beet juice, then pour into any large container. Add same measured amount of both vinegar and sugar to red beet juice. Stir well. Add red beets and hard boiled eggs. Cover and chill at least overnight. Mixture should cover eggs.
    (Note: Eggs soak up juice better if added while they are still slightly warm - right after cooking.)

    mamamia, Oh okay. that's so wild, I was not happy with my post and was editing it and decided to add some recipes before I even saw your post! LOL. Well there you go, Pa dutch potato filling is awesome. If you've never had it it's a must try. Go to any diner around here and you'll find that and red beet eggs, cottage cheese with apple butter on top of it (YUM!) and chow chow, chicken and dumplings, chicken pot pie, chicken corn noodle soup, rivels, shoo fly pie, funny cake, deep dark chocolate cake with peanut butter frosting, ap cakes, gooey sticky buns covered in walnuts and raisins, potato rolls and breads of every variety, bacon string beans and potatoes, Amish macaroni and potato salad very different made with a cooked dressing, pepper cabbage salad, three bean salad (my Mom's favorite) chicken crocettes, apple and corn fritters......The list just goes on and on. Growing up here I never thought a lot about it, I just figured everybody ate the same kinds of foods. Boy was I surprised when I moved out of state, I really became homesick and missed the food so much. If you want any recipes for any of these just let me know.

    Thanks for the recipes Pollypurebred39! I have put them in my recipe book and will try them out this week! I'm always looking for ways to cook beets and potatoes.

    Kaos Kitty, red beet eggs get better with age. Let them soak in fridge for a week in a large gallon jar, till their red all the way through and wow! you've got something awesome! If you don't have enough liquid add a bit of water. It won't hurt it if it's just a little.

    Oh, and you can use the juice again and again, just add more boiled eggs.
