Talking Question for Canadian Folks about Poutine!

I would love to make this! I live in the deep south and I'm not sure if cheese curds are readily available... Can I use cottage cheese for this or is there something else I can use? Who loves poutine? Who hates it? I would love to know!

    No cottage cheese. lol
    You need [ame="http://en.wikipedia.org/wiki/Cheese_curds"]cheese curds[/ame]

If you can't find them then I would use mozzarella.
