    Default Shrimp tacos!

    Okay, so this wasn't a super low-budget meal, but I've been trying (without telling him) to get my DH to eat healthier and cut down on meat some. He's a meat and potatoes guy, except for when he can get his hands on crab legs or lobster (which is pretty much when his parents take us out for dinner) and he doesn't like most vegetables. To top it off, I'm an amateur cook, still in the experimental stage. DH has been told to be totally honest with me when I ask him how something was. If it sucks, he'll tell me, which is good in the long run.

    Anyway, tonight I decided to try something different with stuff we had in the house. lt was:

    10-12 oz shrimp (which had been in the freezer for months), seasoned w/chili powder & salt.

    A vegetable slaw made from cabbage, carrots, green onions, jalapenos and cilantro, with lime juice, olive oil and a dash of salt.

    And then we just put them on top of corn tortillas with a little sour cream and hot sauce.

    It made 6 tacos--I had 2 and DH had 4.

    DH LOVED them! And he never eats anything mexican without cheese.. I'm thinking it could work with any meat, so I'll try chicken next time, maybe some sirloin steak if find a great sale.

    Shrimp tacos sounds yummy. My hubby will not touch anything thats green. So when it comes to veggies he is out.

    Oh that sounds good. I love tacos. But I like the hard shell better....think it is the 'crunch'. I really miss the fish tacos from San Diego....yeah, fast food......but they were sooooo good.
