~I've never had this so I did an internet search. Did you mean a rind preserve or a red part preserve?

Thank you...
I have a rind recipe, but I was looking for a more "modern" (can't interpret the 100+ year old one I have) preserve recipe...I'll try the 2nd one.

Here is a link to a safe, tested recipe. Personally, I'd avoid any recipes before 1989 because there have been many changes in home canning and many older recipes may not be processed long enough, or use unsafe ingredients and/or methods.
