I have a few that I like but will have to post them later when I can see. It's dark. lol. You should try chickpea cutlets too. Yum. This might be better in the food forums.

This is our favorite bean burger recipe. I keep a stack of them in the freezer for quick meals on Friday (vegetarian/meatless meal day). It uses pinto beans, but you could probably use chickpeas just as well.

    Bean Burgers

By Anita Cecena in the book - Eat More, Weigh Less - by Dr. Dean Ornish

1/2 c. minced green onions (I also use fresh chives.)
    1-1/2 T. minced garlic
2 T. white wine or vegetable stock (or water or a small amount of oil)
1 29-oz. can cooked drained pinto beans
3/4 c. cracker meal (I also use dried bread crumbs from homemade ww bread)
2 egg whites (or 1 whole egg)
    1/2 c. chopped fresh parsley
    2 T. seasoned rice vinegar
1/2 t. SPIKE seasoning powder (found in health food stores)

    Preheat the oven to 350°F.

In a small nonstick saute pan, braise the onions and garlic in the white wine until soft.

In a medium bowl, combine the sauteed onions and garlic, beans, cracker meal, egg whites, parsley, vinegar, and seasoning powder. Mash well with a fork or potato masher until blended but not entirely smooth.

On a parchment-lined nonstick baking sheet, drop the mixture by 1/2-cup smounts and flatten gently with a spoon to form six 5-inch "burgers." (Note: I make them with 1/3-cup - we think 1/2-cup is too large.) Bake for 25 minutes, or until set and beginning to brown lightly. Serve hot.

To reheat frozen burgers: Thaw in the refrigerator overnight and then a quick pan fry to crisp them up a bit and warm through.

Here's a food blog that talks about them. Apparently, Real Simple had a recipe.

Also try looking for falafel, which is I think their middle eastern name?

Look in the Asian foods at your local store for seasoned rice vinegar. It's flavored with sugar and salt (and sometimes sake).

You can use almost any vinegar as a substitute, just use less of it (or to taste). I bought the seasoned rice wine vinegar when I first made the recipe (1993) and never used it again once it was used up.

I've seen seasoned rice vinegar at Bel Air/Raley's. May depend on the number of Asians in your neighborhood.
