My new hot weather cooking appliance.
I purchased a GT Express 101 (new-in-the-box) http://www.gtxpress.com/ at a garage sale 2-weeks ago for $5. I've seen the info-mercials and thought it would work well for quick meal preparation during these hot summer days, when I can't use the Solar Ovens. I've managed to scale down some of our "old favorite" recipes to fit this appliance for 2-servings, and was VERY happy with the results. My head is spinning with all the possibilities!
I'm an unrepentant kitchen-gadget person, so this was a great find for me. I'm compiling my own recipe collection for it because I think my non-cooking hubby may even be able to cook using it (LOL).
Anyone else successfully using one of these?

I've never heard of these, but it sounds really cool. Is it like a Foreman grill?

I got one for Christmas last year and it came with a small cookbook. I have not done a darn thing with it. lol. It's not really a grill and the recipes it came with is something I won't eat. Maybe I should look at it again or maybe you will inspire me to break it out and use it.

It has 2 chambers (cooking wells) for cooking food, unlike a flat grill surface. The chicken I cooked in it was fork tender. While I assembled the ingredients, I preheated the Express. Put 1/2 T. Italian Dressing in the bottom of each chamber, added a raw chicken tenderloin, flipped it over so each side had some dressing on it. Topped the chicken with a sprig of rosemary. I chopped half a carrot and a small stalk of celery and added that to the top of the chicken. Put down the lid and cooked 8-10 minutes. Next time I'll toss in some frozen green beans or peas with it.
If you are familiar with Bisquick-type (Impossible) casseroles, I've converted a couple of those recipes to serve two. Did a couple wraps (sandwiches) in them as well. You can make all kinds of things using a flour tortilla.
Haven't tried any desserts yet... There's a Coconut Custard Pie recipe, similar to a blender recipe I make, that may be my first dessert I make in it.
I think the Express would work very well for a family that has people coming and going on different schedules who would still like to have a nice hot meal. Each person could quickly assemble and cook a whole meal in 10-15-minutes.

My Mom (soon to be retired) told me she got this or something similar. I look forward to reading more of your experiments.
I'm glad it works well for you. I really like that small things like this and the Foreman grills don't heat up the entire room in the summer. It seems like an awesome purchase when cooking for 2.
