    Default Potato - Help!

    First, I have a very sweet neighbor. She just gave me 10lbs of potatos. The problem is, I have 15lbs already. So, my questions - how long will potatos keep, how should I store them or what can I make with lots of potatos. As a rule, we dont usually eat alot of potatos, not that we dont like them, we just dont.

    Thanks for any ideas. I hate to waste a nice gift.

    I'd take some of the big ones and use for a potato supper with toppings.

    I know my dad would make some soup and freeze it in meal sized containers.

    We like pan baked potatoes too - put a little olive oil in the bottom of an iron skillet, add seasonings (salt, pepper, garlic, Italian or Mexican spices) put the potato face down and cook a tiny bit then put in the oven until done.

    Those are some good ideas. I especially like the pan baked one. I had never heard of that before.

    French Fries!!
    Saloped Potatoes (freeze)
    Potato Soup as mentioned above would be great!
    twice baked potatoes and then freeze!
    Thay also last along time in fridge if you have the room.

    I was given a 50# bag early this spring and we are almost all gone.
    We have made a ponit to eat them at least 4 times a week.
    I have baked them, scallopped them, mashed, boiled them, made potato salad, made potato soup and roasted them. Roasted is the most requested way.
    I wash them then chunk them leave the peel on. Into a gallon plastic bag put enought potoates for your group. For me depends on how many kids show up for dinner. Pour olive oil to lightly coat. Sprinkle either onion soup mix 1/2 a package or savvory herb comes just like onion soup mix or a heavy hand of Itaian sesoning. Seal bag and shake til potatoes are coated. Spray a lipped cookie sheet aka jellyroll sheet with non stick spray. Put into oven and bake at 450 for about 10 to 15 minutes. Test one. Now depending on your family you may want them to go longer for a crispier texture turn them. Or pull them out and feed them to your group.

    Ohhhh, the roasted ones sound wonderful also. I knew you guys would come up with some great ideas. Also, I didnt know you could store potatos in the fridge...hahaha....

    If you absolutely can not eat them (I get tired of them after a while, too) can you give some to the food bank or a shelter? They could probably use them.

    I too have many potatoes.... I found a sale on 5pound bags for one dollar. So I got 40 pounds. I store them in my cool dry basement off the floor in a cardboard box. My dh grew potatoes too, so I have another 5 gallon pail full.......
    My mom suggested cutting them up as fries and freezing them......

    While you are using them up, be sure to keep them in a cool dry place.......they will keep a really long time if kept cool.......short of freezing.........the cooler the better.

    Here is a link........which does state not to store them in the refrig. (they will become "too sweet"....what?) and also NOT to wash them first b/4 storing them.

    Fried potatoes, hash browns, potato salad. I also make a breakfast skillet that my family loves(although we eat it for dinner LOL).

    Peel the potatoes and cut into small cubes. Put a small amount of oil in a skillet and fry the potatoes, seasoning with salt and pepper until almost done. Add some cooked meat(my family likes sausage best in this but you can use crumbled bacon, ham, hamburger). Stir together several eggs in a bowl(the number depends on how many you are feeding. For a family of four I use about 6 eggs). Pour the eggs over the potato/meat mix and stir until the eggs are cooked.

    You can also add peppers and onions as you fry the potatoes if you like!

    1. Peel, cut in wedges, cook in your large stockpot, drain, cool, bag and freeze. Thaw when needed, drain juices, fry in EVOO.
    2. Peel or not, prepare in wedges, bake with EVOO and seasonings, cool, bag and freeze. Re-heat in oven when needed.

    I process large bags of potatoes like this all the time, and have no more wasted potatoes. As well, I boil up a stockpot of potatoes once a week, then mash some of them, make up some casseroles; use some of them for potato salad, use some of them for fried potatoes, and some of them for soup or stew. I save the veggie stock for the soup or for gravy. The peelings go in the garden soil. The main thing is to store them well, check them once a week, and use up the ones that need to be used before spoilage.

    Potatoes DO get sweet if stored too long in the 'fridge. Ask me how I know.

    You could cube with skin on, bake or boil, mash and freeze. Then just make mashed potatoes when you want to - with different toppings. Cheesy potatoes, chives and sour cream, parmesan and bread crumbs, etc.
