I need bulk veggie help!
Please and Thank you!
I bought 10lbs of Yellow onion and Potatoes.
I decided to food process my yellow onion and freeze it.
What to do with potatoes?
Here is the big question, how long do potatoes last and if they grow eyes (which they haven't yet) is that bad?

If they have eyes u can just cut them out when they sprout and use right away i had 5 potato's in my cabinet for about a month and they are good shape still. I"m trying to sprout eyes on them and plant them.

There's another chat going on about this somewhere - anyway, my recommendation is to cook, mash and freeze them in med-sized bowls, then you can do what you want with them - seasoning, cheese, veggies, garlic, onion - whatever type mashed potatoes you like!

I make mashed potatoes also and freeze them. I put them in zip-lock baggies. It is great to have them ready when you don't feel like taking the time to make. They heat up very well. I also make hashbrowns. I cut up the potatoes into 1/4 inch pieces and fry them up with some herbs and freeze them as well. My kids love them and they are fast to heat up in microwave. Hope this helps.

I didn't know you could freeze mashed potatoes! Thanks for posting this as I will begin to do that with any extra....instead of trying to eat them up all the time.

Potato sprouts should be broken off. If left on, they hasten whizzleing. They should keep for awhile at room temperature. We keep ours in the basement at sixty degrees. they will last at least six months. Be sure to use the smallest first.

I wish I could get my potatoes to last longer... too hot in Florida. Should I put them in the fridge?

I didn't know you could freeze smashed taters, my middle child loves them. He would live on them if i let him lol
What is the best way to heat them? microwave?

I'll see if I can dig up the link for it, but I know on another forum I saw someone used a dehydrator (or oven at 170* F) and sliced the taters thin, dried them, then blended them to basically make homemade tater flakes. I would think you could then bag/vacuum pack/freeze from there and would be good for quite a while.

I know - all these years I've been throwing out potatoes - then about six months ago someone told me I could mash/freeze. I had no idea! But isn't that great?
