    Default Just made 6 loaves of Zucchini bread

    I have so much zucchini in the freezer ,i though i would use some of it today.Instead of using a full cup pf sugar for the batch i used half sugar and half dark molasses..Smells so good.

    I love zucchini bread also. Dh likes it because he takes it to work for his breakfast along with his coffee.

    I just winged the mollasses. I just took a 1/2 cup of sugar out of the recipe and added a 1/2 cup molasses.

    Is there anyone who grows zucchini, or lives next door to someone who grows zucchini, who DOESN'T have a lot of the stuff in their freezer (LOL)? We love that spicy goodness of fresh-baked zucchini bread and chocolate zucchini cake.

    Helpful hint: when you substitute a dry sweetener (sugar) with a liquid sweetener (molasses, maple syrup, brown rice syrup, agave nectar, etc.), depending on how much you use, you may need to reduce the amount of liquid in the recipe. If the liquid is in the form of an egg, or there isn't a liquid to reduce, then you may need to add some flour to compensate for the added liquid. In some cases you may need to add 1/4 t. baking soda per cup of liquid sweetener used in the recipe because the rise in the baked good is affected by the liquid sweetener.
