smoker
We got a smoker and a sausage stuffer given to us. Now I know how to use the stuffer but there is no instructions or model number on the smoker. I tried to google it but can't find anything. Does anyone know how to use a Coleman outdoorsman charcoal smoker? It has two ceramic pans and two grill shelves in it.

Ohhh. Thanks lady. I have a brand new smoker that I haven't a clue how to use. I'm not sure where the directions are now. My brother put it together for me so now I should be good to go. I just need to find time to stay home long enough to watch it cook.LOL

I have a delicious recipe for smoked turkey if anyone wants it and when we have the smoker going I always throw on mixed nuts and garlic in a pan ~ they are soooo good! Beef brisket on a smoker is incredible!

You should be able to get a copy of the instructions at any appliance repair shop. Write down the name and model number, or any information you can get, and go in and ask. Saturday morning is probably not your best time, as they will be very busy.
Likewise if you have a specialty grill and smoker shop in town, that would be a great place to ask.
I took a class from this guy a couple years ago, covered the basics, I thought it was very informative. Like a lot of cooking you just have to jump in there and do it, though. http://www.ribstarsbbq.com/ He has a couple books which aren't bad, the Backyard BBQ book covers the basics and has some good recipes for KC style smoked meats.

We looked for a number but there isn't one on it anywhere. I'd love the recipes you guys have. My MIL said that a small smoked roasting chicken is really good too. I'll have to get one this week and try it.

I just make up my own recipes for brisket but here are the smoked turkey and smoked nuts recipes from recipezaar.

I have a turkey and a chicken! Gotta convince DH to move all his stuff in the shed so that we can get to the smoker. Once the process gets started,I'm sure DH will be a willing participent.
