    Default What would you make?

    I want to make up a bag of pinto beans for supper tomorrow, but I'm struggling for ideas. I can make yeast bread, fry bread, or corn bread to go with it. Or even corn fritters.


    What would you do with a bag of beans if this was what was in your pantry?

    Corn bread...hands down!!! Yellow, not white...not sweet..just plain old country cornbread in an iron skillet

    I say cornbread too!! I use that goya ham flavoring in my pinto beans and we love it. I had tried using bacon but it just wasnt as good as the goya flavoring.

    You've got all the makings for a pot of ham & bean soup and also mexican night...refried beans=
    open faced enchiladas, tacos, bean nachos

    looked/binged pinto beans and came up with this

    My ex mother in law used to fix the beans with ham flavoring ( bone ) onions, yellow unsweetened cornbread, sliced tomatoes, cucumber ( garden time, couldn't afford it otherwise ) and good old fried potatoes.

    Now that was some good country eating. Not organically correct but damn good eating,

    I just posted two recipes in the LAPAW thread for you: pinto beans a or a pinto bean cake. Wasn't sure if you had all the ingredients though.

    What I would do is cook the pinto beans with a pinch or two of the ham seasoning, onions, salt, pepper, and a ham bone in my crock pot. When it's almost dinner time, mix up a nice batch of cornbread and cook it in my heated and oiled iron skillet.

    Tacos would be the next night's dinner.
    Saute a diced onion and bell pepper and cook about a cup of rice.
    Take the cooked rice, add in a cup or so of the left over beans, some salsa, taco sauce, and the sauteed onions and peppers. Place in a sauce pan or microwave safe dish and heat on low until heated through. This is your taco filling.
    In the same pan where the onions were sauteed, add a bit more oil, and lightly fry the corn tortillas on one side, then flip and fold, and fry a little bit more. Drain on paper towels to remove excess grease.
    Fill your tacos with the mix and add a little cheese, sour cream, and shredded lettuce/cabbage.

    Another planned over meal with the pinto beans...beef and beans...
    Take a 1/2 -3/4 lb ground meat or beef cubes and cook it with a diced onion, bell pepper, 1 stalk diced celery, salt and pepper. Rinse and drain.
    Cook a cup of rice while the meat is cooking.
    Add about a cup or so of the left over cooked beans to the meat and veggie mixture. Cook on low
    20 - 30 minutes.
    Serve over the cooked rice.

    A freezer meal that can be made from the last little bit of left over beans would be either burritos, chimichangas, or enchiladas.
    Take the l/o beans-make basically refried beans.
    Mix the refried beans, some cooked rice, cooked onions, peppers, any left over meat, and cheese together.
    Place the mixture in the whole wheat tortillas and roll into whatever shape.
    Individually wrap each with foil and place into a freezer zip top bag. Freeze. Dinner for another day.
    To prepare just place the wrapped pieces onto a baking dish and bake for 30-45 minutes. When done, unwrap and place shredded lettuce/cabbage, cheese, and sour cream on top...eat and enjoy. Could serve with corn fritters and string beans.

    As another option, could make a goulash type meal...
    Cook bacon, reserving drippings. Crush bacon into small pieces.
    Cook diced onions, cooked rice, beans, diced carrots, diced celery, zucchini, corn, and string beans in the reserved bacon drippings. When done, sprinkle bacon bits onto each individual serving.*Optional* could add a tbsp or so of sour cream into dish before serving.

    Hhhmmmm...that's all I can think of right now...headache is starting to get kinda bad...

    I found this from your link. I think they might like this on top on cornbread.

    Country Pinto Beans

    1 lb. dry pinto beans

    1/4 lb. bacon or salt pork

    1 medium onion chopped

    2 t. salt

    Wash the beans by putting them in a bowl with warm water. Stir them around and drain the water. Do this several times until the water is clear. Cover with water and soak overnight.

    Put the beans in a pot and cover with water. Add the onions and the salt pork. Cover the pot and simmer for 2 1/2 to 3 hours. Stir occasionally and add water if necessary.

    When the beans are tender, add the salt. Continue to cook until the liquid is creamy.

    fairydana, to tell you the truth, I don't even remember buying the Goya seasoning. I wasn't all that impressed, but I though maybe I added to much. Now after hearing how you felt about it, maybe not.

    I do think cornbread is the clear winner here! LOL!

    Glad to help...now you have many recipes to try and all frugal. Amazed at how many mexican meals you can do with that. Daughter used to cut the shells ( flour AND corn, each a different taste ) into eights like a pizza and deep fry them. Right after taking them out she would take different spices to flavor them. Taco Bell used to shake them still hot and oily in brown sugar and cinnamon. Forget what they called them. They were good.

    Ahh...miss her country meals and miss her. She died several years ago.

    Dang, now I want fried potatoes!!! With onions none the less.
