    Default I suprised myself

I came home this evening trying to figure out what to fix for dinner, didn't have aything thawed and I didn't want spaghetti again. I found one huge chicken breast in the freezer and I had some of the chicken left over from crock pot chicken. So I boiled the one chicken breast and then I shredded it up along with the rest of the other chicken. I had 2 cans of cream of chicken soup an one can of cream of mushroom soup. I added them to the chicken, added water and then made some dumplins. It was the best chicken and dumplins. I even have some left over for tomorrow. I was so afraid that it wouldn't be good. DH and DD liked it as well.

Mmm I am making a roasted chicken dinner tonight, and will make both, and a chicken pot pie with the remainder. You have inspired me to make dumplings with the soup from the broth sometime this week. Thanks!

See....necessity really IS the "mother of invention". Makes me wonder just how many other recipes were born this way. The problem I have when I put together an impromtu meal, is remembering everything I added. So good for you that you remembered it all, and you'll get to make it the same way again. And if you're like me, chances are you'll make it even better the 2nd time around.

It really does sound good. I just might have to try it sometime.
