The grocery store is gonna make me broke!
I made a trip to the grocery store today...here's what I bought...
3lbs 73/17 ground beef
3.5lbs boneless porkchops(8 chops in the pkg)
whole roaster chicken
1 loaf french bread
6pk sub rolls
6pk bagels
gallon milk
cottage cheese
half &half
shredded mozz cheese
2 jars sauce
generic splenda
gallon white vinager
salad dressing
iceburg lettuce
2 pkgs concord grapes
4pk tomatoes
4 yams
total=$81.73!!!!!
I already split the hamburg into 3 separate #'s
split the chops into 2 pkgs of 4...
Meals that I already planned...
french bread pizza
bbq cups
roasted chicken
meatball grinders
baked pork chops
Thats all I got...
Any suggestions on what to do with the extra chicken after the initial roasted chicken meal? (no soups please)
What can I do with the 2nd pkg of pork chops?
I'm trying to stretch the food....Its just me and DS but my SIL and neice join us frequently...(we eat over there too)

When I have LO chicken I use it for chicken enchiladas or chicken and rice casserole.

I marinade pork chops, grill or bake and serve with canned corn and white rice.
marinade -
1 Tbl dried oregano
1 Tbl dried parsley
3 Tbl parmesan cheese
2 Tbl lemon juice
2 Tbl Worcestershire sauce
1 tsp garlic salt or powder
1/4 cup white wine
S&P
I sometimes double the marinade and then boil it and use as a sauce over the rice and corn. If you don't have the white wine I bet you could use some of that white vinegar you just bought.Judy

Here is a copycat recipe for Cracker Barrel Chicken and Dumplings, it is the same recipe I use, except for the chicken part, I just use stewed or leftover chicken.

I make tamale pie with leftover meat.
Cut the meat up
add tomatoe paste and taco seasoning
I cut up some carrots and/or potatoes small to stretch out the meat too. Usually a can of corn and some beans.
put in a casserole and top with cornbread mix or hm mix
It's just chili and cornbread casserole really.
For pork chops I usually pound them thin and bread them with italian bread crumbs, fry them and then add some lemon juice and chicken stock to the yummy bits left in the pan. Then thicken that up a bit and pour over egg noodles. It's poor man's scallopini.--------------------------------------

Also, have you tried the ingredient search on allrecipes.com? You put it what you have on hand and it will pull up recipes that use those ingredients. There is even a spot to put things you don't want in the ingredient list. I use it quite a bit.

With the left over chicken I would make a creamed chicken with carrots, celery, and onion. You can then make chicken pot pie, creamed chicken over bisquits, chicken and dumplings, or creamed chicken over waffles.
Or you could make
chicken salad
chicken tacos
chicken chili (by adding a can of beans you will increase the amount of chili)
chicken quesadillas
chicken cachiatore
chicken lasagna
With the pork you can make pork fried rice or pork lo mein which would probably only use two pork chops. You could also pound the pork chops thin then bread and fry them. Pork chops also cook nicely in the crockpot, just add some chicken stock and some vegetables in the morning to the crockpot and by the evening you have a great dinner. Make a gravy with the liquid, serve with noodles.

If I'm lazy I use a casserole dish and in the bottom of it I put in a little green or red enchilada sauce then layer in corn tortillas to cover that, add in the chicken and cheese, any cheese you like, then more sauce and then repeat layers. If I have more time I warm up the tortillas and then fill them with the chicken and cheese and a little sauce, roll them and then stick them in the pan. Whichever way I do it I top it all off with the rest of the sauce and then bake 30 minutes or so at 350. If it is just dh eating I add olives and onions but the kids and I like it better without.

I scrape the chicken bones and make pot pie or chicken salad for sandwiches. In winter I make tortilla soup with lots of vegetables.
You can take the pork loin off the bone and slice it for stir fry, or cube it for sweet and sour pork. You can also pound them out a little, roll them in flour and have fried pork cutlets -- sort of a boneless chicken fried pork chop. You can pulse the raw pork in a blender or food processor until coarsely ground and then use it in egg rolls, meatballs, or mixed with the beef for meatloaf. Or add salt, pepper, sage and cayenne to make your own breakfast sausage.... and I'm sure you can think of things to do with that.Use it up, Wear it out,

Salsa chicken is really yummy...
In the crockpot
* Add 2 to 3 chicken breasts
* 1/2 packet taco seasoning
* 1/2 cup salsa
Cook all day.
When I am getting ready to serve I add 1 can (or equivalant) of refried beans and 1/2 cup salsa. We serve with tortilla chips or in tortillas. Good and easy!Frugalista Mama to DD 12 & DS 8

i only buy meats on sale
this week i got some good deeals
family packs with 10 nice sized chicken thighs in them for ~ 5$ each - it was a special for that day - i got 4
they had marked down steak like meat cut into thin strips - marked 1$ off reg 3.xx price so i paid 2.xx each one ( got 3 for stews or pepper steak etc )
today at a store i went to for pasta but they were out - they had twin packs of london broil for 1.99 lb - bought one for 8$
will cooke both use 1.5 for main dinner and then the rest of the second for a stew or pepper steak etc
i got 18 eggs for 99c
our type of tP for 5.49 for a 12 pk ( meets my price of 50c a roll or less )
was able to get laundry detg for 1.99 a bottle
and even some edame in sea salt frozen steamer bags for oldest ds reg 2.48 each for 99c each
yoplait yogurts 60c each
cans tomato paste 33c each
ketchup and BBq sauce for 88c eachand if they werent out i would have had alot of pasta at 49c each to replace what i lost from Irene .
eggo waffles for 99c a box
5 lb bag of potatoes 2.49
and i had no coupons but watching the lady in front or me who did i am betting i would have saved at least 10$ if i was organized
i really havent seen my food bill go up i do see high prices and think thats crazy but i just walk past it and find something else as a substitute*~Debbi~*
