    Default What's going on today?

    I admit, I've gotten kinda lax in the cooking department these past couple of years. Most of the time it's a sandwich or soup since I'm home alone a lot (dd has moved out and dh works out of state 3 weeks a month). Am trying to change that, so today this is on my plate:

    -Cooking 5lbs of hamburger (boiling ala. Margerie... yes, I still do this ), cooling over night, then bagging in 1lb pks for the freezer.
    -Cooking 2 pks of bacon, for the freezer as well (easier breakfasts and blt's by just nuking them a bit, for a one time mess)
    -Cooking sausage and bagging for upcoming homemade pizzas.

    Used to love batch cooking and seeing the freezer full of goodies. It was fun and I missed it. Cut up bags of onions and peppers for the freezer yesterday.

    Am really anxious to see if this move is going to happen soon, or what. I miss cooking for other people, and I know my dh misses me cooking for him every night. I gotta fatten him up, he lost 35lbs with his cancer goings on.

    So anyways, what's on your plate today?? What kind of money saving plans you got??

    Step 2: waiting on amount, hubby had followup colonoscopy, I had visit to ER with followup procedure
    Step 3: to follow, won't know aim until things settle
    Step 4: to follow, currently at 6%
    Step 5: grown child
    Step 6: huge mortgage ANNIHILATED!!
    Step 7: ahhhh....

    Nothing going on here until our power is restored..Been without power for 4 days now!

    pammy - Im envious. I would LOVE to prep and batch cook/freeze. Dad won't allow it. He feels compelled to use things ASAP. He almost had a bird when I bought 10lbs of all three: carrots, onions & potatoes. They were $1.47/each - how could I pass that up!

    Umm...Not a whole lot

    Going to the post office to mail my FV ornaments. First day I've had the car when the post office has been open in the past 2-3 weeks, so I've got to get them out today or they won't get out.

    Plan on making a ton of pancakes for lunch and the freezer.

    Making meatballs for tonight's supper.

    I decided to make "gourmet" sandwiches today for lunch. DH came home for lunch so it was great.

    I made home-made rustic rolls with black sesame seeds, and topped them with mayo w/ Spanish paprika, cheddar cheese, thin sliced chorizo, and stir-fried red peppers. Then I wrapped them in aluminum foil and baked til the cheese melted.

    They were HEAVENLY!! And sooo cheap too! Something you'd pay $7 or $8 for at a good sandwich shop, cost me less than $1 for both to make

    Other than that, laundry and chores all day. I've been fighting off a headache all day. We need to get money out of the bank to pay our rent and the banks are backed up so we are going to try going back later today and hope for better luck. Pain in the tush!

    Yesterday morning I cooked up a bag of white beans. Divided them up and froze most of them. I love white beans mashed up with olive oil, garlic powder and sage. Since I have decided to eat more beans plan on doing this more often than buying canned beans.

    I'm sorry to hear the power is still out Brenda.

    I had to run ds to the Dr today. We stopped for a few things. I am baking up crust less pies today and doing a few tator tot hot dishes (yuck) for the freezer. Very easy day. My wok week starts tomorrow so it is good to have as much done as possible.

    Brenda67: hope the power is turned on soon. Can't do much without that. It's a good thing you were prepared for it.

    Libby: Your dad takes the cake! He must have had food poisoning one too many times.

    I'm baking a pumpkin and turning it into puree for the freezer.

    A friend also came over with a ton of fabric from her daughter for us to sew up and sell at the next sale in 2 1/2 weeks! I better get at it. I've got to cut a few things out.

    Peanut - quick question for you on the pumpkin. I'm planning to buy some pumpkins this weekend and want to do something similar, but I was planning to chop, boil, and puree. Does baking give a better result? I'm thinking maybe it doesn't get watered down? Do you cut into pieces and bake, or bake it whole, or ? (I'm really a newbie to pumpkin...)

    Not much. Went to the post office and the bank and sent Sallie Mae $666.00. I've finally committed to getting serious about paying my student loan debt. Deep breath, I think. :p

    Nothing much Went to the meat shop then to the store for a few things. Got ready for work then got a great deal on Salmon at work so I bought 2 big ones for $2.99 ea for dh!!!! He loved it!!!
