    ~Aww, that stinks!
I always leave my quickbreads in the pan to cool. This is what they did at the restaurant and bakery I worked at. I bake in Pyrex loaf pans and use cheap Aldi spray or a little vegetable oil spread with my fingers to grease the dish first.
I agree that you need to check your oven to see if it's functioning correctly. You did everything right with a recipe that previously worked so if it's not you it has to be the oven.~

You all may think I am crazy but I found that when I was having my monthly NOTHING I baked turned out! I could bake cookies one day and have no problem....get my period that night and bake the same darn recipe the next day and they would not turn out....this happened ALL the time...I finally just gave up baking durning that time...

I make pumpkin bars instead of pumpkin rolls. Tastes the same, but so much easier! You just leave it on the cookie sheet to cool, then frost with a cream cheese frosting (I have a recipe for homemade or you can use store bought). Then cut into bars and serve right from the cookie sheet!

When I make banana bread it always works better to let it cool in the pan for a few minutes before you try to remove it. Might be the same for pumpkin bread.
