First loaf of gluten-free bread
Finally decided to make my first gluten-free bread in the bread machine. Am hoping it works out. Have purchased frozen gluten-free bread but think I should be able to make it cheaper.

Waiting to hear how this turns out. I've been gluten free for a tad over a month now. I've bought the frozen and the fresh Udi's. The texture is wonky to me unless I toast the bread.

The first loaf came out bad. Should have baked it longer. Right now I have another loaf in the breadmaker. Will see what happens, fingers crossed.

I have been gluten free for just over a year. Right now I have Rudis in the freezer. On sale it was $4
My husband asked me what it was made out of the other night (meaning what type of flour) and I said, "I don't know....bricks." LOL. Most of them are so dang dense!

Well it turned out ok. The middle sank and I need to purchase xanthum gum and figure out a replacement for egg that does not include potato. But it is dense and eddible.

Places that sell xanthan gum will also sell an egg replacement product. I would check the organic and gluten-free sections of the supermarket.
I made gluten free bread before and DS13 didn't like it so much (although it was pretty tasty to me).
I haven't heard of anyone baking it in the bread machine. I did it like that before but the middle never properly baked all the way through. Can you try mixing the dough in the machine and then baking it in the oven in a bread pan?Wife to DH since 10/31/2002!

I have seen one of the egg replacers in the store and it contains potato which I can not eat. Ended up using something else and the bread actually came out. Didn't sink in the middle. The loaf is larger than the frozen gluten free bread in the supermarkets and it has the texture of rye bread and a dense cake mixed together. Just glad that it came out and will be making the bread this way from now on when I want to.

What was the final recipe you used please? Amazon.com sells gluten free flours, xanthum gun, etc. I've never bought any but would be willing to if I can bake a decent loaf of bread.

Later on today I will post the recipe. It is gluten free, dairy free and egg free bread.

We tried so many different blends of flours, so many different techniques, so many different batches, and most of them turned out terrible. Ultimately, we decided to just use the following mix:

It comes out perfect every time, although I believe my wife adds extra honey to the mix. We also use the same mix for some really good pizza crust.

For what it's worth, Udi's bakery is about 2 miles from the house, so I can get it super fresh. The Pamela's above still has a better taste, texture and price.
