    Default Got lots and lots of produce from the garden to eat

    so we won't be buying many groceries for the next few days I bought some fruit today, some cheese, stuff to make yogurt with, cream cheese for armadillo eggs on the grill and some meat. I think I'm set for a few days minus milk in about 4 more days or so. Hope to stay out of the stores for several days

    Armadillo Eggs

    2 Jars whole jalapeno peppers
    1 pound buld sausage, at room temperature
    2 cups Bisquick
    2 cups shredded cheddar cheese
    1 cups shredded monterey Jack cheeese
    1 package shake N Bake for pork

    Mix Bisquick, sausage and cheddar cheese by hand. Remove stem from peppers and slice lengthwise. Remove stems and stuff peppers with the Monterrey Jack Cheese. Pat small pieces of the Bisquick mixture flat and wrap around the stuffed peppers. Roll each one in the Shake N Bake. Bake on an ungreased cookie sheet at 425 degrees for 15 to 20 minutes. Makes 20 to 30 "eggs."

    Sometimes we use a mix of half shredded cheeses/half cream cheese...I hope this is what you ladies were looking for.

    That recipe sounds really good NeonMartini. We make ours by just cutting in half and de-seeding jalepenos and stuffing them with cream cheese, wrap about 1/3 slice of thin sliced bacon and cook on the grill until bacon is done (cook slowly).

    I planted my first garden this year. I planted tomatoes, pickles, peppers and acorn squash. I have SOOOOO many blossoms on my acorn squash, I think I'll be eating it every day through out the winter, I only planted 4 little plants!

    THAT sounds good! If I added the bacon to mine before the breading, would that be asking for a heart attack?

    I like both of the recipes mentioned. I didn't know what it was either. Another one to try.

    I'm glad you cleared that up about the armadillo eggs, I was getting worried....LOL they sound good. I'm not really getting anything out of my garden yet....DRAT!

    There is a recipe in the kitchen basics forum under the make it yourself or make it from scratch sub forum.

    We've decided that they aren't so heart healthy anyway you eat em with all the cheese and bacon. Especially if you eat as many as we like to.....
