    Default The story of the five dollar roast

    A couple of months ago I found a chuck roast marked half-off at a local grocery store because it had to be sold by the next day. This is the only way that I afford to buy meat - grabbing the almost out-of-date, half-off pieces.

    I bought the roast for about $5, then cut it in half for two meals. The first meal was a crock-pot roast, heavy on the veggies. We had leftovers from that meal that I used in an enchilada rice recipe the next day. That meal also had enough for leftovers the next lunch.

    The other half was in the freezer, until I pulled it out yesterday. I precooked it in the crockpot so I could shred it for dinner tonight. The juices were saved, per Dh's request, to be used in a future lentil meal. Tonight I made up a meal using the shredded beef, diced tomatoes with green chilies, kidney beans, and corn. All that added together made a huge pot, so before adding the macaroni pasta I pulled off more than half to freeze for another meal. After we finished there was still enough in the pan with the pasta for DH to take for lunch tomorrow.

    These are all meals feeding 2 adults, 6yr old, 4 yrold and 20 month old. I don't make different meals for the girls. From that one $5 roast I have made 7 meals.

    My dh doesn't seem to get as much joy as I do out of this - so I thought I would share with others who might appreciate it.

    You go Amy!! That is one awesome way to stretch the food budget.

    That's really cool. I love seeing how people can stretch their food. I am going to buy some meat on sale on Friday. I hope I can do as well as you have.

    You know, I try to tell my friends stories like that and their eyes glaze over. I know what you mean bout telling someone who'll appreciate it. You've given me some inspirational ideas about the cheap roasts I have in my deep freeze!

    That's very good! Makes that $5 roast worth about 7 times it's weight in gold.
